Pancake Puff with Fresh Berries

It is finally starting to feel like spring in the Midwest, hurrah! All of the flowering trees in my neighborhood decided to bloom seemingly overnight and the world is back in color. When the tulips, daffodils, and hyacinths pop up, I make a mental note that I need to hurry up and hit our local nursery before Mother's Day rolls around and all of the good flats of flowers and hanging baskets have been scooped up. I always get both of our moms a few hanging baskets of flowers for Mother's Day, but for myself I always preferred when the family would bring me breakfast in bed over other tangible gifts.  For someone who made all of the meals and had to deal with kitchen cleanup daily, it was always nice to have the tables turned. So as I was scrolling through Golden Blossom Honey's recipes recently, I came upon this Pancake Puff with Fresh Berries recipe that I thought would make for a really lovely surprise for mom on her special day. 

This is a one-pan recipe that is super easy to prepare, so with minimal help, even the littles can pitch in to bake up this special breakfast for mom. While it does say pancake in the title, this does not have the same texture as your traditional pancake. It's a lot more dense and chewy, which I absolutely loved since I'm not an overly huge fan of pancakes that always seem too bready. Served with sweet berries and a dollop of whipped cream, and a cup of her favorite tea or coffee, this is a breakfast truly worthy of honoring mom for all of the sacrifices she makes for her family every day. 

Ingredients

Pancake:

2 tablespoons butter

6 eggs

3 ounces cream cheese, softened

1 cup milk

3 tablespoons GOLDEN BLOSSOM HONEY

1 cup flour

1/2 teaspoon salt

1/2 teaspoon baking powder

Berries:

2 cups fresh berries (sliced strawberries, blueberries or raspberries)

2 tablespoons GOLDEN BLOSSOM HONEY

Quick Cream of Wheat

There's something comforting about a hot breakfast to jump start a chilly morning. My daughter has been a long time fan of Cocoa Wheats, which happens to be located right next to the box of Cream of Wheat at the grocers. I have always skipped over the Cream of Wheat because something about the picture on the box made me think of southern grits, which I used to honestly feel a rage towards when they would serve that for breakfast at my preschool. My whole family on my mother's side is from the south and I don't think a single one of us ever acquired a taste for grits, so I don't even know how those are still a thing, but here we are. So as I was scrolling through Golden Blossom Honey's recipes last week looking for a Valentine's Day recipe to share with you all next month, I happened upon their recipe for Quick Cream of Wheat. You know I've been a fan of their recipes for over a decade now, so I decided to trust their judgement and tossed that red box in my cart while sending up a hope and a prayer that it wouldn't taste like grits in the end. 


As far as easy breakfasts go, you can't find an easier one than this. Just a few simple ingredients and a microwave are all you need to have your hot breakfast on the table in under 5 minutes. As for the taste test, my daughter was the first to try it and declared it tasted like nothing. I think it's because she was expecting it to be as sweet as her Cocoa Wheats and because she ate it without mixing any honey or fruit in. The husband, on the other hand, was really after the fruit at first, but as he dug in was like, "This is actually really good! Oh, look at the ingredients on the box. It's really good for you too. There's a lot of vitamins in this!" After reluctantly trying my share, I ended up agreeing with Jason. This was actually quite good. Nothing like those icky southern grits at all. I did opt to skip the water and apple juice in this recipe and went with vanilla almond milk instead, simply because I never like to use water in these kinds of recipes and apple juice usually doesn't agree with my sensitive stomach. I did top with my favorite berries, banana slices, and a drizzle more of honey. You can add in any of your favorite fruits, nuts, or seeds to dress it up a little or eat it plain as the recipe calls for. 2 out of 3 Mahoneys give this recipe a thumbs up. Don't mind the 3rd one though. Sometimes she just doesn't know what's good for her LOL. 

Ingredients

1/4 cup cream of wheat

1 cup water or apple juice

Orange Muffins

Running a bit late this week, but I'm here! Back with another amazing Golden Blossom Honey recipe for you to feast your eyes upon. Being on the go so much these last few weeks, I've been relying too much on store bought pastries and baked goods to fill my tummy in the mornings, but for some reason they just haven't been very satisfying lately. It's the same old options week after week, and I've been needing a little more excitement over the usual offerings. Jason brought me a pistachio muffin earlier this week, and normally I'd be pleased with such a delight, but even that fell short for me. So, I was going to make some pumpkin orange muffins that I featured here last autumn, but I saw regular Orange Muffins there that I thought about trying instead. As much as I do love me all things pumpkin, I haven't YET switched over to more autumn inspired eats this year. 
 
 
These orange muffins bake up so fluffy and moist and are packed with such a tantalizing citrus flavor, they gave me back a little delight that I've been missing from my morning breakfasts. The pecans added a great texture, but you could also swap them out no problem if you prefer walnuts in your baked goods. If you like more of a dessert muffin, you could always top these with an orange glaze by mixing a few tablespoons of powdered sugar and orange juice together then drizzling over the top. I left them as is though, but I do prefer jumbo muffins, so next time I bake these I'll put them in my large 6 cup muffin tin instead of the standard 12 cup tin. Ditch the store bought baked goods and pair these with your favorite tea or coffee for an inspired morning breakfast or a midday snack. You won't regret the change! 

Ingredients

1 1/4 cups flour

3/4 cup whole wheat flour

1 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup butter, room temperature

1/2 cup sugar

1/4 cup GOLDEN BLOSSOM HONEY

2 eggs

2 teaspoons orange peel, grated

1/2 cup orange juice

3/4 cup pecans, chopped

Almond Shortcake Biscuits with Fresh Summer Fruit

Even though I am sooo ready for autumn weather, the one thing that keeps me going through these summer months is the abundance of in-season fruit. We have an amazing organic blueberry farm shortly across town that Allison and I love to visit every year. We pick enough berries to last us for months on end and have a great time researching new recipes to try with our haul. Usually we end up putting them in desserts and baked goods or blending them into smoothies, but sometimes they are perfect with just a splash of honey and served over something, like waffles, pancakes, or even these Almond Shortcake Biscuits with Fresh Summer Fruit. This recipe I pulled from Golden Blossom Honey's website this week for a summery breakfast option in place of the biscuits and gravy that my husband loves to make several mornings a week. This recipe is more fitting for a lighter meal during the hot months over the thicker, heavier southern breakfast classic that leaves one feeling sluggish and weighed down after eating. 

 
These biscuits could go either way, for breakfast or eaten as a dessert, but I really love it in place of regular breakfast foods. Normally I'd pay a lot for fruit topped pancakes at a restaurant when we are traveling, but I do try to be a little more budget conscious during the days we are staying in our home and this helps me get a similar taste experience without paying high menu prices we get when dining out. The shortcake recipe is super easy to follow and I found that the dough holds up quite well in the fridge for several days when it's wrapped tightly in plastic wrap, so I can just roll out enough dough for however much I'll need for my meal and can save the rest for the next day so I don't have to bake the entire batch in one go. This ensures a pillowy shortcake each time I'm in the mood to have this as a meal. If you aren't a fan of peaches or blueberries, no worries. Any seasonal fruit can be swapped out, making this another fantastic customizable recipe from Golden Blossom Honey.

Ingredients

Fruit:

4 ripe peaches, peeled and sliced

1 pint blueberries

3 tablespoons RAW GOLDEN BLOSSOM HONEY

Biscuits:

2 cups flour

1 tablespoon baking powder

1 teaspoon salt

1/2 cup butter

1/2 cup sliced almonds

3/4 cup milk

Energy Booster Breakfast

I was scrolling through Facebook and up popped a "suggested for you" group: The Dull Women's Group. At first I was like, wtf, but then I was like apparently Facebook knows me all too well because I'm probably as dull as they come. I work in my home office all day, I hate getting out of my pajamas and brushing my hair, I have 4 cats, and I prefer my own company over spending time with other humans. I also get into these ruts of eating the same thing over and over again. Like the 3 month stretch of time that I ate nothing but peanut butter sandwiches and hot tea for breakfast. Which, if I'm honest, was right before my 2 month period of eating nothing but a bagel with cream cheese every morning. I like consistency and structure in my daily life and sometimes it's hard to break free from that. But sometimes all it takes is a shift in the weather to make me want to try something new. I spoke a little too soon last week about the glorious warm temperatures we've been having lately, because it seems like Old Man Winter was laughing behind my back when he decided to dust us with snow and cold temps again this week. A bagel and cream cheese wasn't going to cut it for breakfast when I was wanting something warm and comforting. I normally have steel cut oats on hand, but the grocers was out this week and sent me home with rolled oats instead. I wasn't gung-ho on the swaparoo, but then I remembered that I had this Energy Booster Breakfast recipe from Golden Blossom Honey saved to try this autumn, and this seemed like a much better time to indulge than waiting 6 more months to give it a go. 
 
 
I love a hot cup of apple cider in the autumn, but I also like to buy it occasionally for a special treat throughout the rest of the year, so I was pretty happy that I had half a gallon in the fridge already and I could get right down to business cooking up a breakfast packed with flavor and nutrition. It was delightfully simple to make, because if being dull isn't bad enough, I am not a morning person and lose patience in the kitchen rather quickly before noon. Therefore, having this ready in under 10 minutes pretty much solidified that this will be my go-to breakfast all autumn long. And I mean ALL autumn. Every day. And if that makes me dive deeper into dullhood, I'm here for it.

Ingredients

2 cups old fashioned oats

3 1/2 cups apple cider

1/2 teaspoon cinnamon

1/4 teaspoon cloves

Healthy Honey Breakfast Shake

I'm just going to go ahead and pat myself on the back this week since I didn't hit up the stores for the half price Valentine's Day candy this year. It was tempting, but I received many bags of Lindor Truffles for Christmas and will be picking through those for awhile still and just didn't need the extra chocolate beckoning me to come have a bite. Because it never stops at just one bite when you know there's an abundance. What I did do though, was look for tasty ways to use up the sale priced fruit from the weekend before it was set to spoil. I used my bananas for some chocolate chip banana bread, lemons were sliced and put into water jugs for infused water, and the rest I tossed into a Healthy Honey Breakfast Shake from a recipe I grabbed off of the Golden Blossom Honey website. 
 
 
I love this type of recipe because there are no set rules for what can be tossed into the mix. That makes it fun to experiment not only with different fruit concoctions, but with different kinds of juices as well. Since we were swimming in strawberries, kiwi, and blueberries, I dumped those into the blender. Then I used a strawberry acai juice in addition to the honey for the sweetener. I still have blueberries leftover and thought I'd try something tangy for my next round and hit it with some lemonade and that might be my summertime brunch shake if it ends up being a hit. If you don't want to play with different juices, mix up the yogurt flavors. I usually stick with plain or vanilla, but there are so many different options, I feel like the possibilities for new flavor creations would be endless with this recipe! 

Ingredients

1/2 – 1 cup strawberries, peaches, bananas, or any combination of fruit

1 cup yogurt, low-fat or non-fat

2 Tablespoons RAW GOLDEN BLOSSOM HONEY

2 Tablespoons any fruit juice

Ricotta Spinach Pie

It's October, my favorite month of all! We have just completed a full selling season at our local market and I, for one, am glad to have that behind us. I'm happy to have my husband home again on weekday mornings because he gets up earlier than I do, makes breakfast, and heats the water for my tea. Not to sound like a diva, but I miss the extra attention I get when we have more time in the day. This week's menu consisted of blueberry pancakes, omelettes, breakfast croissant sandwiches, and Ricotta Spinach Pie, a recipe we pulled off of Golden Blossom Honey.
 
 
This breakfast bake has so many of my favorite ingredients, and I consider it a comfort food fit for the chilly weather season. Honestly, any recipe that has 3 different cheeses will probably get my seal of approval right off the bat. This is a delightful vegetarian recipe, but if you've been here for a bit, you know I'm all about versatile dishes, and this is one that would be easy to customize for carnivores. Toss in a little scrambled sausage or even some diced ham to make it a hearty meaty dish. We do family Christmas breakfast at our house every year, and even though October just started, December is going to be here quicker than we realize. You're going to want to save this recipe for all of your upcoming holiday breakfasts or brunches because it's guaranteed to be a crowd pleaser! 
 

Ingredients

1 uncooked 9-inch pie crust or spray a 9-inch pie pan with olive oil and sprinkle with 1/2 cup dry breadcrumbs

2 tablespoons olive oil

1/2 cup onions, chopped

1/2 pound mushrooms, sliced

1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon ground nutmeg

1/4 cup red bell pepper, choppped

3 eggs

1 (15-ounce) container ricotta cheese

4 ounces mozzarella cheese, grated

1 cup Parmesan cheese

Orange Zested Granola

I like mornings about as much as I like February. Which means, not at all. I am finding though that where I used to wake up and survive on tea alone for the first few hours of my day, as I am aging my body is all but demanding some nutrition in my belly almost immediately upon waking. The joys of getting older, eh? While I don't relish in the idea of crawling out of my warm bed, I am starting to look forward to a smackerel of something tasty for breakfast. Usually it's a pastry, or the husband will have omelettes or oatmeal waiting for me by the time I waddle myself down to the kitchen (because unlike me, he is a morning person and has all of the early morning cooking motivation that I lack). But, now that our spring season is back in swing, he's on the road with our daughter and I'm usually left home on the weekends to fend for myself and the dogs. So what's a girl to do? Turn to her trusty Golden Blossom Honey for easy meal solutions, of course. There I recently found this Orange Zested Granola recipe that I am confident will at least keep sustained every weekend morning from now until May when I have my personal chef, aka Jason, back in the kitchen again. 
 
 
My favorite thing about this recipe is I get a whole bunch of granola in one go. I was able to fill my biggest baking sheet with the mixture, which means that stored in an air tight container, one batch is going to last me quite some time. I use it in my breakfast smoothie bowls and in yogurt parfaits for extra crunch and flavor, as well as stored in individual grab and go baggies for a quick, healthy afternoon snack. This week I will fill a bowl with this granola and add almond milk for a homemade granola cereal. I personally love the recipe as is since it adds a tropical touch to these dregs of winter. But, this is one of those versatile recipes that you can add your own touch to without ruining the finished result. Chocolate chips, raisins, different nuts, dried berries.... the possibilities are endless. Use this recipe as a base, then let your imagination go wild on the mix-ins. Why not get a little crazy in February since there isn't much else going on this month. 

Ingredients

3 cups old fashioned rolled oats
1/2 cup toasted wheat germ (found in cereal section of grocery store)
1/2 cup sliced almonds
1/3 cup GOLDEN BLOSSOM HONEY
1 tablespoon orange zest
1/3 cup freshly squeezed orange juice
1/2 teaspoon ground cinnamon
1 cup flaked coconut
