It is finally starting to feel like spring in the Midwest, hurrah! All of the flowering trees in my neighborhood decided to bloom seemingly overnight and the world is back in color. When the tulips, daffodils, and hyacinths pop up, I make a mental note that I need to hurry up and hit our local nursery before Mother's Day rolls around and all of the good flats of flowers and hanging baskets have been scooped up. I always get both of our moms a few hanging baskets of flowers for Mother's Day, but for myself I always preferred when the family would bring me breakfast in bed over other tangible gifts. For someone who made all of the meals and had to deal with kitchen cleanup daily, it was always nice to have the tables turned. So as I was scrolling through Golden Blossom Honey's recipes recently, I came upon this
Pancake Puff with Fresh Berries recipe that I thought would make for a really lovely surprise for mom on her special day.

This is a one-pan recipe that is super easy to prepare, so with minimal help, even the littles can pitch in to bake up this special breakfast for mom. While it does say pancake in the title, this does not have the same texture as your traditional pancake. It's a lot more dense and chewy, which I absolutely loved since I'm not an overly huge fan of pancakes that always seem too bready. Served with sweet berries and a dollop of whipped cream, and a cup of her favorite tea or coffee, this is a breakfast truly worthy of honoring mom for all of the sacrifices she makes for her family every day.
Ingredients
Pancake:
2 tablespoons butter
6 eggs
3 ounces cream cheese, softened
1 cup milk
3 tablespoons GOLDEN BLOSSOM HONEY
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
Berries:
2 cups fresh berries (sliced strawberries, blueberries or raspberries)
2 tablespoons GOLDEN BLOSSOM HONEY

When do you usually make your first trip of the season to the local greenhouse?

ReplyDeleteYou are late this year with blooming while we are early. We already have lilacs, irises and lily of the valley in full bloom. Our lilacs are terrible this year.
Thanks, Dezzy! My lilacs look pathetic this year for some reason. Probably because we didn't prune the bush back last year. Jason hacked down my hydrangea bush last autumn because it was getting way too big, so idk if I'll see any blooms on the stumpy stems he left :(
DeleteI am not sure, but I think hydrangeas are not supposed to be cut in the Autumn but spring, otherwise you will kill them. We also did not prune the lilacs and they did not bloom much this year, sadly. Now we have irises blooming in all colours, from yellow to lilac and deep violet and white.
DeleteMy irises haven't bloomed in years and idk why. I never like them anyway, so no loss, but it still pisses me off that they get the stems but no blooms. Jason is the worst when it comes to my yard plants. He mowed over my ferns last year and set me off. I had to instruct him this year to stay the hell away from them when he started with the yard work.
DeleteWe usually go the weekend before Memorial Day. Unfortunately, so many local family greenhouses and garden centers have closed that it looks like we may have to resort to Lowe’s.🙄
ReplyDeleteThat sucks. I hate going to big box stores. They are always so over priced and their plants are so sad looking. We have an amazing greenhouse here that we're lucky to live close by. Very inexpensive and their plants are always amazing.
