Ricotta Spinach Pie

It's October, my favorite month of all! We have just completed a full selling season at our local market and I, for one, am glad to have that behind us. I'm happy to have my husband home again on weekday mornings because he gets up earlier than I do, makes breakfast, and heats the water for my tea. Not to sound like a diva, but I miss the extra attention I get when we have more time in the day. This week's menu consisted of blueberry pancakes, omelettes, breakfast croissant sandwiches, and Ricotta Spinach Pie, a recipe we pulled off of Golden Blossom Honey.
 
 
This breakfast bake has so many of my favorite ingredients, and I consider it a comfort food fit for the chilly weather season. Honestly, any recipe that has 3 different cheeses will probably get my seal of approval right off the bat. This is a delightful vegetarian recipe, but if you've been here for a bit, you know I'm all about versatile dishes, and this is one that would be easy to customize for carnivores. Toss in a little scrambled sausage or even some diced ham to make it a hearty meaty dish. We do family Christmas breakfast at our house every year, and even though October just started, December is going to be here quicker than we realize. You're going to want to save this recipe for all of your upcoming holiday breakfasts or brunches because it's guaranteed to be a crowd pleaser! 
 

Ingredients

1 uncooked 9-inch pie crust or spray a 9-inch pie pan with olive oil and sprinkle with 1/2 cup dry breadcrumbs

2 tablespoons olive oil

1/2 cup onions, chopped

1/2 pound mushrooms, sliced

1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon ground nutmeg

1/4 cup red bell pepper, choppped

3 eggs

1 (15-ounce) container ricotta cheese

4 ounces mozzarella cheese, grated

1 cup Parmesan cheese

  2. I would eat this for dindins not breakfast, it is too hearty for me. So you have closed shop at the market for this year? Our fleamarket stalls are open even during the coldest part of the winter LOL Poor bastards.
    Cold nights is my fave thing in October, we had just 6*C last night, but I still went to the green grocers this morning in shorts, polo and flip flops LOL Now I have put my socks on and am ready for a day of translating.

    1. Yes, it only runs May through September then we close up shop and hit the road. There's many old vendors there that wouldn't stay open in the winter months so no point in opening if half the vendors are staying home those months. Allison and Jason love them some cold nights too. I am not a fan, but I admit that I do sleep better when the room is cold. I just shiver and shake the bed like an earthquake until I do fall asleep though.

    2. I throw another blanket just over my legs in cold nights, that helps me not feel the cold. In the winter I will throw a fake fur cover in the bottom part of the bed over my duvet in case my feet peak out during the night. That way I am nice and comfy and warm and yet not too toasty.

    3. I sleep with two blankets, then I'll put a heated mattress pad on the bed when it gets too cold. If I get too hot, I let my feet peek out too and that tends to cool me down pretty quick.

    4. I would not do that, deary, if you push your feet outside the blanket, the Boogeyman will snatch them and eat them, that has always been my biggest bedroom fear.....

  3. My favorite thing would be an unseasonably warm Halloween night!

    I made a ham and veggie quiche this past week for dinner. Definitely a favorite food around here.

    1. Unfortunately we get so many Halloweens with rain or snow here. I am often jealous of those in Cali or Florida where they actually get kids that want to go out and trick or treat. Each year it seems like less and less want to brave the elements, even for free candy.

  5. A husband who gets up early and makes breakfast ... can you give us your recipe for that? This pie looks great, and I agree with you that the time of year is coming when you need to feed a breakfast crowd.
