Crushed Toffee Pumpkin Roll

Here we are, halfway through October and my best friend and I were just talking about how we haven't even made any pumpkin desserts yet this season. In all fairness, I've been on more of an apple kick anyway. But, I grabbed 6 cans of pumpkin last week while at the grocers because I haven't been able to find it since the pandemic started, with the intention of whipping up at least one pumpkin roll and a few batches of muffins before snow hits the ground. Browsing through Golden Blossom Honey, I found this unique recipe that called for crushed toffee candies to be added into the filling mix, and since I am a sucker for Heath bars, I found the winning recipe I wanted to bake this autumn. This Crushed Toffee Pumpkin Roll will be great for Halloween and Thanksgiving alike, but you're probably going to want to make a few to enjoy all season long! 
 
 
My best friend insisted she was done making any kind of roll because they always split. And, I'm going to admit, I split this one too. With a little strategic candy placement on top and a few Photoshop touch-ups, because let's admit it food bloggers, PS is sometimes our friend LOL, you can hardly tell. But my family doesn't care if it's pretty as long as it tastes good. I think to prevent splitting after rolling the cake, GENEROUSLY sprinkle the wax paper with powdered sugar before rolling. I'm pretty sure mine only split because I lightly dusted the paper and the warm, moist cake absorbed it all as it was cooling and made the paper stick to the roll, resulting in the tear. This is delicious at room temperature, but I like to pop a slice into the microwave for a few seconds for a warm fall treat. Paired with tea or coffee, it's a great little pick-me-up snack when the cold weather has you feeling some kind of way.

 

Ingredients

Cake:
3/4 cup flour
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground ginger
3/4 teaspoon allspice
6 large eggs, separated
1/3 cup sugar
1/4 cup GOLDEN BLOSSOM HONEY
2/3 cup fresh or canned pumpkin
1/8 teaspoon salt

Filling:
2 Tablespoons rum
1 teaspoon unflavored gelatin
1 cup whipping cream, chilled
3 Tablespoons powdered sugar
3/4 cup toffee candy pieces, crushed

  1. If it splits it means that it is either too dry or you just did not roll it quickly enough after taking it out of the oven :)
    I do ever so love it when you make a rich, cosy photo setting and this one is really inviting and warm.
    PS when you think your sponge will crack, just cut it into three long strips and make a layer rectangular cake out of it. You can also save the ends of the roll, mash them with some jam and use that to fix the cracks.

    1. It was definitely not dry and I immediately rolled it when it came out of the oven. It split because it stuck to the wax paper and I had a hell of a time peeling it off. Next time I'll put a lot more powder sugar on the paper to prevent it from cracking again. I do like the idea of just mashing up the ends and mixing it with jam to fill in the cracks. I thought about just icing the whole thing and calling it a day. That would have been an easy fix too, LOL

    2. Looking at the recipe now, I'd say it cracked because it has no fat in it, very strange recipe with no oil in it, not even a few spoons. There is no cream nor milk in it either, does not it taste like a giant pumpkin omelette? LOL

    3. LOL, no it tastes just like a regular old pumpkin roll, even without the cream or oil. But I do think a pumpkin omelette sounds heavenly. I may have to try concocting a recipe for one this fall.

  2. That looks delish, but I’ve never attempted a roll because I just know I’d break it! I love pumpkin, but it’s hard to find at the stores right now. My daughter warned me a few weeks ago, so I ran to a huge Giant Eagle in a neighboring town. They were limiting it to 2 cans per person.

    1. It is hard to find, but I think I lucked out and stumbled upon it right after their delivery arrived because there were 3 huge pallets of it at my store. Thankfully they were not limiting it, but I do understand the need to do so with everyone losing their minds at the grocers this year.

  3. I imagine how fragrant this snack is from the aroma of the ginger and cinnamon used ..., the delicacy is enhanced by the golden honey blossom.

  5. I have never made a roll before so I won’t judge the breakage. The pictures are gorgeous as always!! My favorite is a traditional slice of moist pumpkin bread with mounds of cream cheese spread on top. So yum!
