Delicious Apple Turnovers

Fall is definitely upon us with the drizzling rain and chilly days. This is the time of year that I get the most use out of my oven. There's just something comforting about baking when the skies are gray and the oven is putting off a little extra heat into the home. I wasn't going to share another apple recipe this season, but this Apple Turnover recipe from Golden Blossom Honey kept calling out to me this week and I simply couldn't resist baking up a batch to share with you all.
 
 

I don't normally make these kinds of recipes on weekdays since it does take longer than I'm willing to invest Monday through Friday, but after several days of rain, I was craving something warm and sweet while curled up in a blanket with my book. This is a great weekend breakfast idea, but I've been returning to my stash time and time again all week when I need a little pick-me-up. What's the good of fall if you can't enjoy its flavors as much as possible throughout the season?

Ingredients

Dough:
1 1/2 cups flour
1/2 cup cake flour
2 teaspoons sugar
12 Tablespoons cold butter, cut into chunks
4 ounces cold cream cheese, cut into small pieces
1 egg yolk, lightly beaten
3-4 Tablespoons ice water
Filling:
2 Tablespoons butter or margarine
3 large Golden Delicious apples, peeled, cored and chopped
1/2 cup apple juice
2 Tablespoons GOLDEN BLOSSOM HONEY
2 teaspoons lemon juice
1/4 cup applesauce
2 Tablespoons golden raisins
1 teaspoon grated lemon zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice

Crushed Toffee Pumpkin Roll

Here we are, halfway through October and my best friend and I were just talking about how we haven't even made any pumpkin desserts yet this season. In all fairness, I've been on more of an apple kick anyway. But, I grabbed 6 cans of pumpkin last week while at the grocers because I haven't been able to find it since the pandemic started, with the intention of whipping up at least one pumpkin roll and a few batches of muffins before snow hits the ground. Browsing through Golden Blossom Honey, I found this unique recipe that called for crushed toffee candies to be added into the filling mix, and since I am a sucker for Heath bars, I found the winning recipe I wanted to bake this autumn. This Crushed Toffee Pumpkin Roll will be great for Halloween and Thanksgiving alike, but you're probably going to want to make a few to enjoy all season long! 
 
 
My best friend insisted she was done making any kind of roll because they always split. And, I'm going to admit, I split this one too. With a little strategic candy placement on top and a few Photoshop touch-ups, because let's admit it food bloggers, PS is sometimes our friend LOL, you can hardly tell. But my family doesn't care if it's pretty as long as it tastes good. I think to prevent splitting after rolling the cake, GENEROUSLY sprinkle the wax paper with powdered sugar before rolling. I'm pretty sure mine only split because I lightly dusted the paper and the warm, moist cake absorbed it all as it was cooling and made the paper stick to the roll, resulting in the tear. This is delicious at room temperature, but I like to pop a slice into the microwave for a few seconds for a warm fall treat. Paired with tea or coffee, it's a great little pick-me-up snack when the cold weather has you feeling some kind of way.

 

Ingredients

Cake:
3/4 cup flour
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground ginger
3/4 teaspoon allspice
6 large eggs, separated
1/3 cup sugar
1/4 cup GOLDEN BLOSSOM HONEY
2/3 cup fresh or canned pumpkin
1/8 teaspoon salt

Filling:
2 Tablespoons rum
1 teaspoon unflavored gelatin
1 cup whipping cream, chilled
3 Tablespoons powdered sugar
3/4 cup toffee candy pieces, crushed

Apple Topping For All Of Your Fall Favorites

I've been in an apple everything phase lately. It really is my favorite flavor of fall, so why not indulge as much as possible while the fruit is in season? There are so many ways to use apples in your recipes, but lately my favorite way is to whip up a scrumptious Apple Topping, a Golden Blossom Honey recipe, to use on everything from waffles to cheesecake to ice cream.
 
 
One batch is enough to cover about 4-5 medium sized waffles, but I like to double the recipe so I have leftovers for my after dinner dessert. If your mixture is looking a little thin, as in you eyeballed the apple cider measurement (guilty!), mix a teaspoon of cornstarch in a teaspoon of water until dissolved, then stir into the simmering mixture.  Also, if you really want to sweeten it up, drizzle a little caramel into the pot for an extra hit of fall flavor. So, so good!

Pumpkin Ice Cream Pie

I've been eyeing those pumpkin pies at Costco this past month and have done a pretty good job of refraining from buying one so far. I usually wait until a little closer to Thanksgiving before making that splurge. While I haven't caved to the purchase yet, recently I was researching pumpkin recipes and found this Pumpkin Ice Cream Pie recipe on Golden Blossom Honey that even I couldn't resist testing out this week.

While I think of pumpkin pie as more of a cozy fall dessert, I know that a lot of the country is still experiencing warm summer-like temperatures, where ice cream is still a top dessert choice because of the heat. With this recipe though, you're getting a nice mix of two seasons rolled into one- ice cream for summer, pumpkin and spices for fall. If summer and autumn had a baby, it would be this pie. Is that a good thing? Absolutely! 

Ingredients
Crust:
1 1/2 cups crushed ginger snaps
1 tablespoon GOLDEN BLOSSOM HONEY
1/4 cup butter, melted
Filling:
1 pint vanilla ice cream, softened
1 cup heavy cream
1/2 teaspoon vanilla
1 cup canned pumpkin (not pie filling)
1/2 cup GOLDEN BLOSSOM RAW HONEY
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
additional whipped cream for garnish, optional

Raisin Pumpkin Cookies

What do you do when you clean out your cabinets and discover you have a few baking items that are going to expire soon? You find a good cookie recipe and fire up the oven. I had some canned pumpkin that was nearing its expiration date, and since I just made a really tasty apple pie not too long ago, I thought I'd go for a sweet dessert of cookies instead. These Raisin Pumpkin Cookies from Golden Blossom Honey were begging to be made, so I rolled up my sleeves and got to work.

I know there are some who prefer their cookies to be crisp, but I am one who LOVES a soft baked cookie. I prefer a chewy, cake-like cookie so this recipe was one that I could really sink my teeth into. The pumpkin helps to bake it up soft, the raisins and walnuts add a nice texture,and the spices add a hint of warmth, making this one awesome seasonal cookie!


Ingredients
1 1/4 cups GOLDEN BLOSSOM HONEY
1/2 cup shortening
2 eggs
1 1/2 cups solid pack pumpkin
2 1/2 cups flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups raisins
1 1/2 cups walnuts, chopped

Autumn Apple Cranberry Pie

I think fall is the best season for baking. During the spring, I'd rather work on my garden, it's too hot in the summer to keep the oven on for very long, and by winter, I'm so frazzled with the impending Christmas holiday, baking stresses me out more than it comforts me. But when glorious fall rolls around, I am soooo ready to get my bake on. It's been raining off and on here all week, and I thought it would be lovely to sit by the window with a good book, a hot cup of tea, and a warm slice of apple pie and watch the rain come down. As luck would have it, I had all of the ingredients on hand for this Autumn Apple Cranberry Pie, a recipe from Golden Blossom Honey.

You don't have to get all fancy with the crust like I did here. Just follow the recipe and pop another pie crust on top, cut a few slits for ventilation, and boom. All done. This is such a quick and simple recipe, you'll want to make it a few times before the season is up.

Quick & Easy Apple Dumplings

Apple season is here! Does anyone else get really excited when you walk in to the grocery store this time of year and they have about a billion different apples on display? I do! Nothing gets me ready for the season faster than shiny Granny Smith, Fuji, Macintosh, Gala, Cortland, and my favorite... Honeycrisp, all beckoning for me to fill my cart so I can go home and get my bake on. Last week was nippy, but we're back to air conditioning weather this week. But that didn't mean I couldn't sneak in an early season quick baking session to satisfy my apple cravings, and this Apple Dumplings recipe from Golden Blossom Honey was just what the doctor ordered.

You know I'm all about the shortcuts lately, and what intrigued me about this recipe was instead of making your own dough, you simply use a can of refrigerated crescent roll dough for the dumplings. It really doesn't get any simpler than that. But, what I liked even more about this recipe was that I could slowly usher in fall while still hanging onto a bit of summer. Combine your warm apple dumplings with a cold scoop of vanilla ice cream and you've got the best of both worlds! 

Ingredients
1/2 cup butter
1 cup orange juice
1/3 cup GOLDEN BLOSSOM HONEY
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 (8 ounce) package refrigerated crescent rolls
2 small Granny Smith apples
1/2 cup walnuts, finely chopped
vanilla ice cream, if desired

Pumpkin Brioche Bread Pudding

It's starting to look a lot like fall in these parts. The leaves are turning beautiful colors, there's a nip in the air, and my deck is covered in acorns. Short of the annoying acorn covered deck, I don't think anything is prettier than the Midwest in autumn. I've begrudgingly let go of summer and have finally embraced the fall season, even diving into making my first pumpkin recipe of the year. I've been tempted by those massive pumpkin pies at Costco, but the husband and daughter have nixed getting one every time we are in there (boooo! on them!) But, I needed a little pumpkin fix last week so I headed into my own kitchen and made a pumpkin brioche bread pudding.

Warm bread pudding is such a welcoming comfort food this time of year, it's hard to resist a heaping bowl full fresh out of the oven.

While it's meant to be a dessert, I admit, I've eaten it as breakfast a time or two. Served with a steaming mug of tea, I can't think of a sweeter way to start the day. For this recipe I used brioche, which gives it a rich and tender crumb. I bought day old brioche rolls at Target on clearance, which I find is a great resource for marked down breads. If you can't find brioche, any French bread will work for this recipe just fine.

Pumpkin Brioche Bread Pudding

INGREDIENTS:


  • 1 cup raisins
  • 1/4 cup apple juice
  • 1/4 cup hot water
  • 8 cups day old cubed brioche, lightly packed
  • 4 eggs
  • 1 cup sugar
  • 1 1/3 cups whole milk
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground allspice
  • pinch salt
  • 1 1/2 cups pumpkin puree

INSTRUCTIONS:


  1. Butter a 9x9 inch baking dish.
  2. Preheat oven to 325 degrees F.
  3. Place the raisins in a small bowl and cover with the apple juice and hot water. Let soak until plump, about 20 minutes. Drain and set aside. 
  4. Spread the cubed bread on a baking sheet. Bake at 325 degrees until lightly toasted (5 to 10 minutes). Remove from oven and let cool.
  5. In a large bowl, whisk together the eggs, sugar, milk, vanilla, cinnamon, ginger, allspice and salt. Add the pumpkin puree and stir until well cmbined. Toss in the toasted bread cubes and stir gently, until the bread is evenly coated.
  6. Let the pudding mixture sit for 15 minutes, stirring gently occasionally, until the bread is well moistened and most of the liquid has been absorbed.
  7. Fold in the drained raisins, then pour the mixture into a the prepared baking dish. Place baking dish in a roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the baking dish.
  8. Transfer the pans to the center rack of the oven. Bake until the custard has set in the center and the top is golden, around 55 to 60 minutes. The center should be firm and the surface dry to the touch. Insert a toothpick into the center, and if it comes out clean, it's done. If the surface is browning quickly, lightly cover with a sheet of aluminum foil.
  9. Remove from the oven and transfer the bread pudding pan to a wire rack to cool, roughly 20 minutes, before serving. Dust with powdered sugar if desired.

My Top 3 Fall "Me Time" Essentials #LiveFlavorfully

Celebrate Fall with Apple Cranberry Crisp

Do you remember when we used to actually look forward to school lunches? My nieces once said they wanted to be school lunch ladies so they could always have access to school lunch, but that was before it got all unappealing to eat these past few years. There was an old photo going around on Facebook of a lunch lady holding up a huge school pizza, and the consensus was that school pizza was the BEST pizza back in the day. I do agree, school pizza used to be super yum, but what really revved my motor was the apple crisp that was always on the menu in the fall. The gooey apple filling topped with an oatmeal crumble... gahhhh! I couldn't wait to dig in!

Seeing that pizza photo and thinking about my old school lunchtime favorite, I was compelled to buy a big bag of Granny Smith apples at Sam's Club last weekend so I could go home and make my own apple crisp. I didn't have a recipe for it in my own stash, so I did what I always do and turned to Golden Blossom Honey first before searching elsewhere. There I came across this Apple Cranberry Crisp and the hunt for a recipe was immediately settled.

The sweetness from the honey and apples is offset with the tart cranberries, giving this dish a perfect blend of fall flavors wrapped into one drool-worthy dessert. I'm just gonna come right out and admit that I ate several heaping spoonfuls of the crumb topping before popping it in the oven. Yes, it was that good raw. Serve this apple cranberry crisp warm out of the oven with a scoop of vanilla ice cream and I bet this recipe becomes a new fall favorite for you too. My girls may not be able to have school apple crisp like I enjoyed many years ago, but this is definitely a respectable substitute.

Topping:
1 cup flour
1/2 cup old-fashioned oats (not instant)
1/3 cup brown sugar, packed
1 teaspoon ground cinnamon
1/2 cup butter, chilled and cut into small pieces
Filling:
5 or 6 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
1 1/2 cups cranberries
1/2 cup GOLDEN BLOSSOM HONEY
2 tablespoons lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
