Three Bean Salad

Since Jason is in Kentucky this week, Allison and I have been trying to have a low-key, quiet girls week at home. We've been looking up new recipes to try for dinner, and while I loathe grocery shopping, it's been fun browsing the aisles looking for new ingredients to shake up our home cooked dinners. We did a Tex-Mex Taco Bowl dinner on Wednesday, but Thursday we were both feeling not only under the weather because of the excessive heat and humidity in our area, but because we did our blood drive donations and were feeling a bit drained after the procedure. Neither of us felt like spending a lot of time in the kitchen, nor were we wanting anything that would sit heavy in the belly. She suggested something like cowboy caviar, but ended up finding this Three Bean Salad recipe on Golden Blossom Honey that we thought sounded not only better, but easier all around. 
 
 
Not only is this a great recipe for a quick meal option, with the summer heat still heavy on our shoulders and the upcoming Labor Day holiday, it's a great one to have on hand for any parties or picnics you may be planning. Since it has minimal ingredients, short prep and cook time, and can be made up to 12 hours in advance, this dish is one that's perfect for busy families, or lazy folk like myself who just don't feel like putting in a lot of effort into meal prep during the dog days of summer. If you have little hands in the kitchen that want to help, this is a recipe that I think would be easy enough for young kids to help make, with a little supervision.

Ingredients

Dressing:

1/3 cup cider vinegar

3 tablespoons Golden Blossom Honey Mustard

1 tablespoon olive oil

salt and pepper

Salad:

1 pound fresh green beans, trimmed and cut into 1-inch pieces

1 (10 ounce) frozen baby Lima beans

1 (15 ounce) can black-eyed peas, rinsed and drained

2 tablespoons red onion, finely chopped

  1. This is a great one for days when we're exhausted. I love that your daughter is a veggies fan. I'm STILL working on this and my kiddo is about to turn 16!

  2. I just make a green salad with one of those ‘envelopes’ of tuna or salmon on top, feta, and grape tomatoes. That’s usually my Saturday dinner unless we go out.

    Why do you hate grocery shopping, deary?
    I have never seen Lima beans here in my life, we just have the white ones, and some brownish and reddish ones in cans. Nothing frozen, just yellow string beans.
    When it is too hot I will also just mix a can of red beans with a diced cucumber and put some mayo on it and call it a lunch.

    1. I just hate the people, the time it takes to get what I need, how high the cost has gone up. It's just never a happy experience for me. I much prefer to just order online then have them do the shopping for me and have it ready when I get there.

      No lima beans there? What a pity! I love them! I do love your lunch idea. It's simple but still satisfying!

  5. Something easy when feeling blah is the way indeed. Letting the little germy fingers of kiddos help can kinda be a win too lol sure sure a little time. Not sure next year counts as a little lol what?
