Smoked Salmon Rolls

The more that I talk with other people about their holiday eating habits, the more I am starting to learn that there are far more families like mine than I realized. And by that I mean those where the majority of people don't like or don't want the traditional holiday main dish staples. You know, turkey, ham, lamb... Jason is the only one in our house that ever wants the main dish. The rest of us load up on appetizers, salad and sides. So, I thought for this week's Golden Blossom Honey post, I wanted to share an appetizer that could also fill in for a main dish course for those people that are coming to Easter dinner that may not want ham, turkey or lamb. Normally pinwheels are considered a lunch type item or an appetizer, which is perfectly fine, but I have decided to put Smoked Salmon Rolls on the main course menu for this Sunday's meal. 
 
 
Salmon is about the only seafood that I will touch, and I can eat pinwheels every day of the weeks, so I was especially excited to give this recipe a try. Roll ups are always so easy to make, but I actually held off on making these because I thought I'd have to forego my curbside grocery order by having to ask the butcher to thin slice some salmon at the counter. I know, first world problems. But I just found out that they have prepacked thin sliced cold smoked salmon ready to go. Who knew? (Probably everyone but me lol). I ended up doing a test run earlier this week and ended up liking them so much, the recipe shot straight to the top of one of my favorite appetizers. My daughter was actually breathing down my neck waiting for me to get these assembled because she was eager to give them a try. From both her and Jason, it was a 5 star recipe. Perfect for all of the upcoming spring holidays, and even to pack for light summertime lunches. Really, it's a recipe worthy of serving for any occasion! 

Ingredients

1 cup red onion, finely chopped

1 Tablespoon GOLDEN BLOSSOM RAW HONEY

1 Tablespoon white wine vinegar

4 ounces cream cheese, room temperature

3 Tablespoons chives, chopped

2 Tablespoons sour cream

1 teaspoon dill, dried

1 Tablespoon capers, drained

5 floured tortillas

6 ounces smoked salmon, thinly sliced

    Back when I still ate meat Easter was my fave food holiday, because I loved what we eat here in Subotica for Easter: we don't have a lunch but a festive breakfast with boiled ham and sausages, boiled eggs and first spring radishes and scallions with some grated pickled horseradish and all of that with a big holiday bread similar to your chalah. And then after the breaky you go out in the yard to search for the hidden oranges, eggs and chocolates hidden by the Easter bunny. And now I'm spending all holidays hungry and .... still fat.... I should probably start drinking to drown my sorrows in vodka....

    1. Dahlink, vodka won't do much for the weight loss LOL. It was amazing how much weight Jason lost when he stopped drinking. I like the idea of hunting for fruit in the yard. We used to hunt for boiled eggs when I was a kid, but somehow it eventually moved to plastic eggs filled with candies or even coins. I've never been a fan of Easter dinner though. Ham was never my thing. I do like salads, and those radishes you also enjoyed. And bread. Oh, I don't know how you've given up bread recently. Methinks I'd rather be dead.

    2. I don't even miss it anymore... I am passed those 21 days that scientists say are the limit after which a human accepts any new habit or change. So, while I'm still mostly hungry during the day, I no longer think about it, I just live with it, I think my body is now used to no bread, flour, sugar and pasta and sweets. The less you give it, the less it asks for. My goal is to eat just the food I made, without anything processed, and I think I will be there sooner or later. I already do not eat sweets, the only sugar I take now is one chocolate on Sunday afternoon, and that is it, for the WHOLE WEEK. I don't even need my raw balls with dates every day.

    3. You gave up the date balls? I love raw date balls. They are my go-to snackie of choice since they are great for traveling. I like a little sweet something after dinner and if I don't have clementines on hand, I grab a date ball or two. But yay and know that I am so very proud of you for sticking with your diet. I am sure it hasn't been easy so far, but you are doing such an amazing job sticking it out!

  2. We always have ham, but not this year. My oldest daughter’s family is going to her in-laws, so only my son and his wife are coming. I’m hoping my husband will grill! I haven’t planned anything, can you believe that? I’ve been dealing with my mom and her finances and health every day the past few weeks. Exhausting. She never threw one piece of paper away, so I’m shredding insurance papers from the 90’s and reading letters from the 70’s from her parents. I’ve been bringing home bags and boxes from her basement for a year now and barely made a dent.

  3. I always made the traditional dinner and then when I became single, I didn't. Every once in awhile I miss the big meals, but mostly I don't even give it a second thought. We make what we like, or what we're in the mood for and enjoy everyone being in the same house for the holidays. These pinwheels look delicious-o!

    1. We didn't do a big feast at Thanksgiving and I was totally feeling the low key vibes that day. This Thanksgiving it will just be me and Jason and I'm honestly looking forward to it. Something small like sandwiches or even a stew. As much as I love my family, those big gatherings with the extended family are exhausting. Like you, I probably won't give a second thought to the fuss of the day!
