Corn Fritters for BTS Mornings

Well, it looks like we're about to almost return to normal here. Next week Allison heads back to regular high school for her senior year. This will be the first time she's been in the school for in-person learning in a year and a half. I'm sure it will take a bit of time to get back into the swing of things, but y'all, as much as I loved having her home with me, I'm also ready for her to go. With back to school season now upon us, it's time to start thinking about morning nutrition to get those developing minds prepped to learn. Pancakes, waffles and eggs are always a good idea for a hot morning meal, but so are fritters. I actually found this Corn Fritters recipe on Golden Blossom Honey and have been making them frequently since last summer. Not only does my family love them, I don't mind making them often because they are super simple to prepare.
 
Okay, I am totally not the June Cleaver type, so I do substitute the grated fresh corn with canned corn. I just use one 15 ounce can of corn kernels, drained (I am sure the equivalent of frozen would work here as well) and give it a few good pulses in the blender. Of course, fresh corn on the cob always tastes better than canned, but sometimes a girl just wants to be lazy and take an easier route. If you're motivated though, definitely grab some corn ears and whip out that grater. These fritters cook up rather quickly, so they are perfect for getting a hot breakfast on the table in a jiffy on busy school mornings. Drizzle a little Golden Blossom Honey over the tops, toss on some fresh chives and if you're feeling it, add a little sour cream to the side for dipping and you're all set.

Ingredients

5 bacon slices
4-5 ears of fresh corn
2 eggs
3 tablespoons GOLDEN BLOSSOM HONEY
6 tablespoons flour
2 teaspoons baking powder
1 teaspoon salt
dash of black pepper

Topping:
1/3 cup GOLDEN BLOSSOM HONEY, warmed

  1. It does look nom nom nom! I do ever so love me fritters but usually loose apetite before I finish frying them from all the nasty oil smells, sadly. I should defo invest in an airfrier but I don't eat fried food that much.
    I have a feeling they will invent a new wave of covid as soon as the school starts, numbers are already rising here and we have maybe like one quarter of vaccinated people LOL I see that in Europe many people will quit their jobs as they are forcing them to vaccinate themselves, Blue is thinking of resigning too.

    1. I gave my air fryer to Mariah and they use it all the time. It lost its novelty to our family rather quickly, so I'm glad someone has been getting some use out of it.

      While I am vaccinated, I do not agree with forced vaccinations. The company Mariah works for was directly involved in the creation of one of the vaccines (I won't mention it here though, but it's one of the most sought after ones available) and her boss absolutely refuses to have the jab. Makes you wonder what she knows that the rest of us do not.

      That is so scary, most of our doctors won't take vaccines either which says a lot. I see your country is the leader in forcing people to get vaccinated or get fired, which shocks me knowing how much you like your 'freedoms'. We will probably riot if they start effing with us that way. They already started riots in France and some other countries.

  2. These early start dates for school kill me. We usually took our family vacations around August 11th! I’m assuming it’s in-person because it was last year, just modified where only half the students were there at the same time. We are unfortunately looking at mask mandates returning because Covid numbers have skyrocketed. I’m pissed off!

    1. Our school mask policy has changed 3 times already and school has only been in session for 3 days. First it was mandatory for all students, then it was optional for vaccinated students, now it's back to everyone has to wear them. Allison is pissed too because she wears her mask from 8:30 to 3:30 at school then has to wear it again at work from 4:30 to 10. She's literally wearing her mask all freaking day long and she is vaccinated.

  10. These look so tasty, thanks for sharing! It's nice it's safe enough for your daughter to start school in person again, that's such a long time not to be in school! I'm glad our kids only had a couple weeks off with all the lockdowns and we are back to 0 cases - it's so hard on them not seeing their friends :(

    1. It was a long time for her and will take a little getting used to but she'll bounce back, I'm sure. Your country followed guidelines a lot better than our citizens, that's why we can't get this under control. 0 cases is something I fear we won't see here for a long time :(

  12. Mica’s annoyed he has to wear a mask. He wants to get to know people, meet girls, and he has to mask up. They have a meeting about it this week. Right now elementary are the only that have to mask. The superintendent is out the box thinking, but Nebraska’s overall are not. There may be protests.

    1. I think it's because elementary age can't get the vaccine yet. Allison is upset that she has to wear hers all day since she is vaccinated. She'll do it, but she doesn't like it.

  13. A guy and I are the only ones in the office that mask up. I just started. Then someone tested positive there.

    I hear about them bar hopping, a girl seems like a major swinger.

    Needless to say I’m not fitting in. It sucks because it pays well + great benefits. I know they don’t get making a project designed well. All they care about is me finding the info without asking where to find it. Their projects are all over the place. It’s hard to jive. It’s depressing.
