Marinated Grilled Orange Chicken

Summer is usually my favorite season, but this year has been a real bummer. By now we should have had several back yard cookouts under our belt, but as of right now, we have a grand total of 0. I know that social distancing is for the greater good, but I'm really missing having all of my family and friends over for too much noise and too much food. But, we still fire up the grill occasionally because it's one of those things that you just have to do each summer. I'm still in clean out the freezer mode here before making another trip to the grocers, and found that I had some chicken that needed to be used up. Instead of making the same old marinade I always do for chicken (which is just a bottle of Italian dressing), I thought this Marinated Grilled Orange Chicken would be a great way to spice things up around here for a change.

The combination of the orange juice and Silver Blossom Honey give the chicken a hit of sweetness that is offset with a kick of heat with the addition of the red pepper flakes.The marinade puts a nice, sticky glaze over the chicken, helping to lock moisture in. Whether or not you're hosting back yard BBQ's this summer, this recipe is a winner for both large and small crowds. 

Ingredients

Marinade:
1 cup orange juice
2/3 cup balsamic vinegar
1/2 cup SILVER BLOSSOM HONEY
2 tablespoons grated orange zest
3 large cloves garlic, minced
1/2 teaspoon crushed red pepper flakes

2 whole chicken breasts, boned, skinned and halved

  1. We still have hot days here, actually I haven't had a day without AC since July. But I remember that back in June and July we were mostly below 30*C which makes this summer a very mild one, which I prefer. I'm currently waiting for a cooler day to go to Novi Sad again to my publisher.

  2. We (meaning my husband) haven’t grilled much either, due to no holiday parties or friend get togethers. I like this recipe and will keep it to try. I usually go the lazy route with the Italian dressing, too.
