Pancakes Topped With Orange-Strawberry Compote

First, I'll apologize for the lack of posts here these past few weeks. It seems that many Blogger blogs have had their photos disappear over the last month and my blog has been no exception. I've got all but a few posts fixed with the photos added back in, but it's hard to get motivated to share new posts when you don't know if your hard work will just get erased again in a few days :( (Time to move to WordPress??)

With that said, hopefully I'll be back to regular posts by next week. For today though, I want to share a great compote recipe that will surely bring a smile to mom's face this upcoming Mother's Day. I know that my favorite gift on Mother's Day has always been breakfast in bed, especially since I love food that I don't have to make myself. Pancakes are usually most welcome, and if they are topped with fruit, all the better. And that's why I thought this Orange-Strawberry Compote recipe from Golden Blossom Honey would be a keeper for a special breakfast this year. 


Orange-Strawberry Compote
 

Mom doesn't like pancakes? No problem! This compote enhances more than just a triple stack. Use it on waffles, oatmeal, or yogurt for breakfast. Or, use it for dessert instead. It will taste so good served over angel food cake, on a cheesecake, or mixed into a light and fluffy mousse. Mom deserves a little sweetness in her life, so no matter what direction you go, make sure she gets a huge serving of this yummy compote this year!

Ingredients
2 naval oranges, peeled and white pith cut away
1 pint strawberries, hulled and sliced
1/2 cup GOLDEN BLOSSOM HONEY
1/4 teaspoon ground cardamom

  1. How do you put photos here, deary, directly by uploading them here on Blogger, or through outside links?
    How is naval orange different from ordinary orange?
    Pancakes here are actually crepes, usually stuffed with apricot jam, or walnuts and sugar, or some chocolate spread. I ate them usually with cinammon and sugar, but I'm not crazy about them. If I was to make pancakes again in my life, I'd probably make some with white chocolate, cherries and whipped cream.

    1. I upload them directly to Blogger from my computer.
      I suppose they were just being technical with the name navel so one doesn't choose a blood orange, nectarine or clementine in the recipe (though I think any of those varieties would work too!)
      I don't like making crepes because I tend to burn the thin batter or it falls apart. We did have some in Paris and they were tres yummy! I think they came be made savory too, no?

    2. They can. The first crepe to be fried always burns or falls apart, but the rest should be OK just use a non sticky pan or, as we do here, an old cast iron one, oiled for each crepe.
      The recipe is 200g soft flour, 2 eggs, 1dcl sunflower oil, 3dcl milk, a teaspoon of salt and a teaspoon of sugar. Ad a bit of water in needed, it needs to be liquidy. Leave for about 20 minutes, and then mix again with a spoon and fry on high temp. Some like to mix one half milk, one half mineral water. Each side takes about a minute.

  2. Is it weird that I don't like pancakes or waffles? But I do like fruit and honey :)

    The photo thing was weird. I noticed it on a few other blogs and it did the same thing to the post in my draft section.

    1. Not weird at all! We all have our likes and dislikes where our taste buds are concerned :)

      I think it has only been the last month of posts that have been affected by the missing photos. I hope they do a fix real soon or I'm going to start the process of moving everything over to WordPress.

    I wonder what the cause.

    1. It's so frustrating with the photos. I'm not sure what the cause is, but fingers crossed they get it fixes asap.

  4. Yum! Those are my two favorite fruits. I'll admit, I'm more of a chocolate chip pancake gal, but these look tasty.

    1. I rarely cook for breakfast too. Maybe I'll get a spark in me to do it on a weekend every now and again, but it's usually fend for yourselves in the morning.

  7. ANY fruit topping I'm ok with. I'd probably stick with mostly berries, but I like lemon pancakes and would eat these too.

    Heck you know me, I'd even add dandelion petals to mine. Ha!

    Never knew there were glitches about. Blah to wordpress though, that has just as many if not more. Pain in the arse.

    1. Good to know that Wordpress isn't so fab either. The glitch does seem to be fixed so we'll wait and see if it messes up again. For now, we'll stick with blogger.

    2. I think blogger finally restored the pics, so if your blog was affected, it should be fine by now. I never fixed the last 3 posts that needed it here and it's finally restored.

      Girl, I am itching to travel so bad. I'm glad we got to hit up the west coast before things got bad here, but I was so looking forward to a trip somewhere this summer. *sigh* Hopefully things will be better by next summer and we can get out there and see the world again ♥

  23. Whew! AMAZING! My kids LOVE all kinds of fun toppings on their pancakes. But I've never tried it with mixed fruits and honey before. Guess I will now have to give my kids this as a try.

    1. Now that blogger is fixed, if it stays fixed, I'll stick around. If not, it might be worthwhile to move everything over to wordpress. I'm just tired of the issues blogger seems to e having these days.
