Thai Chicken Wrap

One good thing about this quarantine is Allison has been more than willing to help around the house. Tired of doing puzzles or Face timing her friends, she has been eager to get in the kitchen to make our lunches and dinners. She and I were going to tuck in for an afternoon of Netflix after her online school work was done, but first she wanted to make sure we had lunch prepped. Wraps are always a good and healthy idea, so while I was finishing up some housework, she tossed together these Thai Chicken Wraps from Golden Blossom Honey to munch on during our movie marathon. 

Thai Chicken Wrap

Use leftover rotisserie chicken to have these wraps on the table in no time. Seitan and Tempeh are great substitutes for the chicken if you want to make these vegetarian, or leave the chicken out altogether and just add in more of the broccoli slaw in its place. If you have a messy eater like my husband, leave them rolled burrito style without slicing diagonally. If you're stuck in the house like most of the world right now, this is a great recipe to encourage the kids to get into the kitchen to start learning a new skill. It doesn't require any cooking, and the only help they'll need is with slicing the veggies and wraps. 

Ingredients
2 cups sliced cooked chicken (use a ready cooked rotisserie chicken to save time)
4 (10-inch) spinach tortilla wraps

Salad:
1 (12-ounce) package Broccoli Cole Slaw, found in produce section
4 scallions, sliced
1/2 cup fresh cilantro, coarsely chopped
1 tablespoon sesame seeds
1 cup chow mien noodles

Dressing:
2 tablespoons rice vinegar
1 tablespoon soy sauce
2 tablespoons GOLDEN BLOSSOM RAW HONEY
1 tablespoon toasted sesame oil
1 tablespoon creamy peanut butter

  2. Love the colour of those spinach wraps! Green is so soothing for the eyes! Ewww on cilantro, that's devil's herb... We live near a school, so it's been very quiet now that school is locked and old people cannot go out, almost as if we're in the village somewhere.

    1. I don't like cilantro either, but Jason's family is really big on it. I always have to leave it out of my portion. I think there was a study that says to some it's either really delicious or tastes like soap. It's a soap flavor to me.

  6. These do look good, for a stay at home lunch.

    Isaak's been drawing a lot. They both do some homework, but not enough. :( I don't know what they'll do when it's time for them to go up a grade.

    Travis' last day, for awhile was today. He's on unemployment. :( At least he can keep those kids busier.

    1. Ugh! So sorry to hear about Travis :( I hope this stimulus passes and it's able to help your family out. My mom was laid off too, until the Indiana lock down is over. It's such a sad and scary time for everyone right now :(

  7. One way to get her to help out haha Chicken sure is a win for me. Still able to go out and about here, so we'll see what happens to many a kiddo soon if they lock us all away.

    1. I am so glad mine are older and can do their own work. I have a hard enough time understanding what they bring home on a normal day, I would have a hell of a time trying to teach them months worth of curriculum.

    This looks really delicious and I will make it as soon as we are allowed to go out of our community and into the big supermarkets to get the ingredients I need. Being on lock down can be so stressful! Saving the recipe!

  11. Yum, these chicken wraps sound amazing. I love having quick and easy meal ideas like this available to make when I don't feel like cooking a huge meal. I use the precooked chicken strips frequently.

  15. My kiddies have been driving me nuts to keep busy. I'm pretty sure "Make Mommy Crack" is their favorite past time. LOL The East Islip moms got together through our Facebook page to do a rainbow scavenger hunt this weekend. We all drew rainbows and hung them in our windows. Then we walked around the neighbor on our own with our kiddies to see how many we can find.

    Your daughter did a fabulous job!! Has she considered a career in the culinary arts?
