Pumpkin Ice Cream Pie

I've been eyeing those pumpkin pies at Costco this past month and have done a pretty good job of refraining from buying one so far. I usually wait until a little closer to Thanksgiving before making that splurge. While I haven't caved to the purchase yet, recently I was researching pumpkin recipes and found this Pumpkin Ice Cream Pie recipe on Golden Blossom Honey that even I couldn't resist testing out this week.

Pumpkin Ice Cream Pie

While I think of pumpkin pie as more of a cozy fall dessert, I know that a lot of the country is still experiencing warm summer-like temperatures, where ice cream is still a top dessert choice because of the heat. With this recipe though, you're getting a nice mix of two seasons rolled into one- ice cream for summer, pumpkin and spices for fall. If summer and autumn had a baby, it would be this pie. Is that a good thing? Absolutely! 

Ingredients
Crust:
1 1/2 cups crushed ginger snaps
1 tablespoon GOLDEN BLOSSOM HONEY
1/4 cup butter, melted
Filling:
1 pint vanilla ice cream, softened
1 cup heavy cream
1/2 teaspoon vanilla
1 cup canned pumpkin (not pie filling)
1/2 cup GOLDEN BLOSSOM RAW HONEY
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
additional whipped cream for garnish, optional

  2. Tres gorgeous photos, thank you for my next wallpaper :) OMG where did you find all those cute lil' pumpkins! They're so gorgeous, I wish I had an aunty with a pumpkin patch LOL I don't do sweets with pumpkins, but I do try to cook a soup or bake it every week now that it is their season! I think we have Dr Oetker's Pumpkin oatmeal, I must send you some, but I don't know what am I supposed to send you now that you is not eating sugar, it stresses me something terribly, deary :)

    1. Thank you, dahlink! The pumpkins I did get from my auntie's pumpkin farm. I do love this season when I can just place them all over my porch for easy holiday decorating.
      Pumpkin oatmeal sounds divine! I don't know if we have that flavor here in oatmeal form, but I'll have to look. Apple spice oatmeal seems to be the popular one this time of the year.

  11. I like summer desserts best (because it means it's summer). :) I laughed at your baby reference. This ice cream pie sounds pretty tasty, actually. A nice deviation from the norm too, that still uses pumpkin!

Btw, today I finally made your Braised Beef Over Noodles ~ I've been sidelined first by a nasty cold and then by cataract surgery. But I'm feeling much better, and today was snowy and cold; so it was a perfect time to try your recipe. OMG it was delicious! Both Terry and I loved it! I know I'll be making it a number of times this winter. And, yay, I have leftovers for tomorrow. Perfect because it will be snowy again (6-12 inches over the next two days) with the temperature dropping (heading to below zero by Wednesday morning). It hasn't snowed here yet (thankfully!) but we might get some mixed into the rain on Halloween. Now that's frightening to me. You go ahead and keep all the snow lol.

  25. Can I be honest? I've never tried pumpkin pie or ice cream before heh.. I love eating it but only if it's in salads, porridge or rice?? Although I do use it as my topping in shepherd's pie to replace the carby potatoes :P
