Crisp Days & Rustic Spinach Pie

What is it about August that gets people in the mood for fall? Normally, I'd be a bit miffed about all of the fall memes that I've seen floating around my social media lately since I'm a summer girl through and through. But, after the horrid heat waves we've been getting, earlier this week I welcomed a day of crisp air. I shut off my air conditioning, opened the doors, brewed myself some hot tea, then wrapped myself in a chunky sweater blanket and relished in the thought of fall hurrying along. I was jonesing to bake a nice warm comfort food, so I pulled up this Rustic Spinach Pie recipe from Golden Blossom Honey and got to work.

I've been feeling a bit under the weather this month, so this rustic spinach pie was just the comfort food that I was needing to lift my spirits. And, I said a little prayer of thanks that I had every ingredient already on hand so I didn't have to make a last minute run to the grocers to pull it all together.

Now that school is right around the corner, this will be a great recipe to tuck away for early morning breakfasts. Make it the night before (be sure to refrigerate it after cooling), then just do a quick reheat the next morning for a fast and tasty breakfast before sending everyone out the door. 

Ingredients

2 ready made 9-inch piecrusts

1 (10-ounce) package frozen chopped spinach, thawed
3 tablespoons butter
1/4 cup onion, chopped
3 tablespoons flour
1/4 teaspoon dried tarragon
1/8 teaspoon pepper
1 cup milk
2 tablespoons GOLDEN BLOSSOM HONEY
2 eggs, beaten
1 cup cottage cheese
1/2 cup feta cheese crumbled
1 egg, beaten

    1. I'm definitely not rushing fall along, but it was nice to sit for a day and think about all the good qualities the crisper weather brings. I will, however, take beach weather over the cool temps any day of the week.

  4. Never knew spinach could be in a pie. One thing I eat though. I'll take fall, but I don't really want it as that means we are closer to that white stuff.

  8. This is a unique mixture. I Never thought of mixing such ingredients to make a rustic spinach pie, but I'd totally try it. I'm going to see if the my teenager will enjoy this with me, we both love to whip stuff up like this to see if we love it or not.

  12. I'd have to find an already made crust. I've tried crust, and just fail every time. I did it for the Pop Tarts I made. It's the laying it in the pan that gets me. This does sound so great though!
