Homemade Chocolate Cherry Sundae Topping

Did my American friends all have a nice 4th of July yesterday? We started our day bright and early celebrating with friends and family, and while I had a fabulous day, I think I'm going to need the full weekend to recover from all of that fun and sun! After a rainy and slightly chilly June, July came bursting in bringing the heat with it, and not only do I feel exhausted from our celebrations, I'm also a little on the crispy side from spending too much time out in the sun yesterday. I'll be nursing a sunburn for the next few days, and what better way to lift a scorching spirit than with ice cream? I usually keep a carton of plain vanilla in the freezer, which pairs perfectly with Homemade Chocolate Cherry Sundae Topping, a Golden Blossom Honey recipe. 

Chocolate Cherry Topping

Chocolate Cherry Sundae Topping is rich, decadent, and surprisingly easier than you think to make. I think the flavors in this topping really stand out in vanilla ice cream, but add it to chocolate ice cream for double the choco love. Minus cooling time, you can have this recipe done in under 10 minutes, and what's better is you can make this ahead of time and keep a batch stored in the fridge for up to a week. I love make ahead recipes, especially in the summertime when I don't want to spend more time at the stove than necessary. My motto this summer: Less stove time, more ice cream time (and chocolate cherry topping too, please!)

Ingredients
1/2 cup heavy cream
1 1/2 Tablespoons GOLDEN BLOSSOM HONEY
3 Tablespoons cherry brandy
1 Tablespoon unsalted butter
4 ounces semisweet chocolate bits
1/4 cup dried cherries, chopped

  1. I do love me cherries on anything! I bought some nasty lemon icecream recently and had to cover it up with bits of biscuits and raspberry chocolate.

    1. I'm not an overly huge fan of lemon flavor, but do take exception to it being in loaf cakes and such. I'd have to pass on lemon ice cream though. Oh, but I do love lemon flavored ice slushies and would never say no to one of those.

  8. I love homemade chocolate syrup. It's way better than the store bought stuff. I'll have to try this. It looks great. Sometimes I add chocolate syrups on crepes with fruit. In this case I'd add cherries; even though it has a cherry taste already. Nom Nom!

    1. I love the idea of using this sauce over crepes. I had some this morning in a heavy strawberry sauce, but I should have added a little chocolate sauce to the mix too.

  18. I hope your sunburn is well behind you, Theresa! They are no fun. We had an enjoyable 4th, taking in the movie "Yesterday," having the traditional fixings, and watching fireworks and lightning from our deck. This recipe for Chocolate Cherry Sundae Topping looks delicious. I wish I had had it for the 4th, although caramelized peaches over vanilla ice cream was also delicious. Have a good one!

  20. I love nuts with my ice-cream!! Been stocking up on lower cals ice-cream like Enlightened and Ben & Jerry's Moophoria.. wish they weren't so expensive here in Singapore! Have you tried?

    1. I have tried Enlightened which I love! Their 100 calorie bars are super yum without the guilt. I haven't done Ben & Jerry's simply because they are super expensive here too. Though, I may have to try that Moophoria next time they go on sale :)
