Dad's Gonna Love This Breakfast Hash!

Last week, I shared a quick and easy no-fuss breakfast recipe that would be perfect for Father's Day. I waffled between 2 recipes to share this year, then wondered why not both? I mean, is there anything better than breakfast food? We have breakfast for dinner here often, and if your husband or father is anything like my husband, he'll eat it morning, noon, and night without complaint. Jason wakes earlier than everyone else, so he's usually in charge of feeding himself in the mornings. One thing that he makes that always disgusts me is corned beef hash in a can. Sorry if you're one of those who likes it too, but to me it looks and smells like canned dog food, so it's something I could never get on board with. Homemade hash, on the other hand, gets a big fat yes from me! One of my favorite Breakfast Hash recipes come from Golden Blossom Honey. This recipe does require more than a few minutes to whip up, but I promise, it is so worth it!

Breakfast Hash

This does have a 30 minute stove top time, but I used a little hack to help save a few prep minutes. Use 2 bags of refrigerated diced potatoes with the chopped onions already inside. I used Simply Potatoes, but if there's a cheaper store brand option, by all means, try those. Of course, you can peel, cook and dice your own potatoes and onions as the recipe calls for, but I'm kind of lazy now that we're on summer vacation, so the store bought pre-diced potatoes was a great option for me.

Hash

If the dads in your life are meat and potatoes men, treat them to this hash this Father's Day. I'm sure they'd love it morning, noon, or night, and I guarantee that it's much tastier than that mush from a can!

Ingredients
2 (11 ounce) packages frozen cream chipped beef
6 or 7 medium potatoes, cooked and chopped
1 1/2 medium onions, finely chopped
1/2 teaspoon black pepper, coarsely ground
2 tablespoons GOLDEN BLOSSOM HONEY
4 tablespoons butter

  1. It never ceases to amaze me how many ready made and prepared food you have in shops over there! Even diced potatoes! We've only started getting some salads like that in bigger stores and only this year I've noticed grated pumpkin and carrots in a bag in my shop, which is a huge novelty. I loved the pumpkin as I really hate peeling them from that hard skin of theirs. Jason probably eats canned things because he's practical like all us men are :) I only buy beans in cans as my life does not allow me to cook them myself. And corn and lentils and chickpeas are always practical canned, and plus I always feel more peaceful with a few cans in the storage in case of apocalypse.

    1. I always marvel at the lack of canned and boxed goods that stores have in other countries. We always schedule a grocery run when we visit new lands just to see the differences. Jason actually doesn't eat much of anything out of a can except for that nasty hash and sometimes soup. He's pretty good about making his own foods from scratch. I use my pressure cooker a lot for beans and chickpeas, so I stopped buying those in cans a long time ago. I will keep one or two on hand though for nights I'm in a super big hurry (or, you know, the apocalypse). Leah has a thing with canned corn though. She'll cook an entire can to eat all by herself. I imagine her stools aren't very pleasant lol

    2. OMG, I know this is a stupid thing to talk about at a food post :) but you started it - one of my friend's husband is gastroenterologist, he works in our local hospital, and he once told me that the two things they mostly see come out of people's intestines, while they are doing the cleaning of the bowels with those tubes, are corn and peppers :) He said they once had some hillbilly granny who ate like twenty corns and did not go to the loo in days, and it took them many hours to clean her up or out LOL

    3. Those are so hard to digest, I can see why they have the most issues with those foods. 20 corns in one sitting though? I hope she learned her lesson not to be such a glutton after that doctor's visit!

    1. Jason's on Keto, so he normally skips the potatoes, but he broke his diet just to enjoy this one.

  9. haha can't say I'd ever want anything that smelled like dog food. But if he likes it, all that matters.

Eating morning noon or night works, as good food is good food and you sure always have winners.

    1. He has to shut the bedroom door and turn on the vent because the smell is enough to make me gag when he makes it. I do not get the appeal of it at all!
