Holidays are Effortlessly Gourmet with Stella® #Stellacheeses

I know that we haven't hit December yet, but as soon as we wrap up Thanksgiving dinner, my family is already planning out our annual Christmas breakfast. Since my mother-in-law cooks for turkey day, it's my duty to host Christmas breakfast. Waffles are always on the menu, so the main dish never needs planning on my part, but I do have to make a few tempting side dishes to keep the meal from feeling a bit boring. I wanted to make bread pudding but with syrup and blueberry toppings already going on the waffles, I was worried about an abundance of sweetness for one meal. Instead of doing the traditional cinnamon and raisin bread pudding, I'm switching it up and taking a more savory approach with my favorite Spinach Mushroom Bread Pudding topped with Stella® Asiago Cheese.

Spinach Mushroom Bread Pudding

I like taking an ordinary dish and giving it a touch of gourmet without a lot of effort, and that's why I chose to include Stella® Asiago Cheese in my dish. With their large variety, it's easy to create gourmet Holiday Cheese Recipes to classy up your table but don't require spending all day in the kitchen to do so. My bread pudding takes 15 minutes of prep work, which leaves plenty of time leftover to focus on tossing together other dishes.

First we cube and toast a loaf of French bread:

While the bread is toasting, sauté some sliced Bella mushrooms:

Whisk together milk, egg, and spices:

Place the toasted bread cubes in a large bowl, then pour the milk/egg mixture over the top. Use a rubber spatula to gently stir to coat the bread cubes. Then, gently stir in thawed and drained frozen spinach and sauteed mushrooms.

Place the mixture into a greased glass baking dish, then generously top with Stella® Asiago Cheese.

Pop that bad boy into the oven and let it do its thing while you move onto creating other traditional holiday recipes.

Yield: Serves 8-10

Mushroom Spinach Bread Pudding

Mushroom Spinach Bread Pudding

 

INGREDIENTS:

  • 1 loaf French bread
  • 1 10oz package frozen spinach, thawed and drained
  • 1 8oz packed sliced Bella mushrooms
  • 8 large eggs
  • 3 cups milk
  • 1 tsp ground thyme
  • 1 tsp salt
  • 1 tsp pepper
  • pinch of nutmeg
  • 1 container Stella® Asiago Cheese

INSTRUCTIONS:


  1. Preheat oven to 375 degrees F.
  2. Slice bread into bite sized cubes, leaving crust on. Place on a rimmed baking sheet and toast for 10 minutes, or until dried out.
  3. While bread is toasting, heat 2 tablespoons olive oil in a medium sized pan and sauté mushrooms.
  4. In a medium sized bowl, whisk the eggs. Whisk in the milk, then thyme, salt, pepper and nutmeg.
  5. Place the toasted bread cubes into a large bowl. Pour the milk/egg mixture over top of bread cubes, then use a rubber spatula to gently stir and coat the bread cubes. Stir in the spinach and mushrooms.
  6. Lightly grease a 9x12 inch baking dish with cooking spray. Pour the bread cube mixture into the baking dish, then top with the whole container of the Stella® Asiago Cheese.
  7. Bake for 25 minutes. Remove from oven and allow to sit 5 minutes before serving.

Pineapple Bread Pudding

I eat pineapple year round, but there's something extra tasty about eating it in summer. There are so many ways you can incorporate it into delicious recipes, pineapple upside down cake being one of my favorites. I saw Pineapple Bread Pudding on Golden Blossom Honey not too long ago and thought it would be a yummy recipe for a summer picnic or gathering.  


The recipe calls for 7 pieces of sliced white bread. I think Texas Toast or cubed French bread would work wonderfully for this recipe as well. 


Ingredients
4 eggs, beaten
1/2 cup butter, melted
3/4 cup GOLDEN BLOSSOM HONEY
1 (20 ounce) can crushed pineapple
7 slices white bread, cubed
