I know that we haven't hit December yet, but as soon as we wrap up Thanksgiving dinner, my family is already planning out our annual Christmas breakfast. Since my mother-in-law cooks for turkey day, it's my duty to host Christmas breakfast. Waffles are always on the menu, so the main dish never needs planning on my part, but I do have to make a few tempting side dishes to keep the meal from feeling a bit boring. I wanted to make bread pudding but with syrup and blueberry toppings already going on the waffles, I was worried about an abundance of sweetness for one meal. Instead of doing the traditional cinnamon and raisin bread pudding, I'm switching it up and taking a more savory approach with my favorite Spinach Mushroom Bread Pudding topped with Stella® Asiago Cheese.
First we cube and toast a loaf of French bread:
Whisk together milk, egg, and spices:
Place the toasted bread cubes in a large bowl, then pour the milk/egg mixture over the top. Use a rubber spatula to gently stir to coat the bread cubes. Then, gently stir in thawed and drained frozen spinach and sauteed mushrooms.
Place the mixture into a greased glass baking dish, then generously top with Stella® Asiago Cheese.
Pop that bad boy into the oven and let it do its thing while you move onto creating other traditional holiday recipes.
Yield: Serves 8-10
Mushroom Spinach Bread Pudding
INGREDIENTS:
- 1 loaf French bread
- 1 10oz package frozen spinach, thawed and drained
- 1 8oz packed sliced Bella mushrooms
- 8 large eggs
- 3 cups milk
- 1 tsp ground thyme
- 1 tsp salt
- 1 tsp pepper
- pinch of nutmeg
- 1 container Stella® Asiago Cheese
INSTRUCTIONS:
- Preheat oven to 375 degrees F.
- Slice bread into bite sized cubes, leaving crust on. Place on a rimmed baking sheet and toast for 10 minutes, or until dried out.
- While bread is toasting, heat 2 tablespoons olive oil in a medium sized pan and sauté mushrooms.
- In a medium sized bowl, whisk the eggs. Whisk in the milk, then thyme, salt, pepper and nutmeg.
- Place the toasted bread cubes into a large bowl. Pour the milk/egg mixture over top of bread cubes, then use a rubber spatula to gently stir and coat the bread cubes. Stir in the spinach and mushrooms.
- Lightly grease a 9x12 inch baking dish with cooking spray. Pour the bread cube mixture into the baking dish, then top with the whole container of the Stella® Asiago Cheese.
- Bake for 25 minutes. Remove from oven and allow to sit 5 minutes before serving.
