Popular Indian Breakfast Dish, Aloo Paratha

Hi guys, hope you are well and had a superb weekend. Thanks a lot Theresa for having me guest post for you :)  I have known Theresa for the last five years and hope we definitely meet some day. I go by Z and blog at SlimExpecations.

I do not believe in depriving myself and I feel its ok to indulge at times. Hence, I share with you a recipe that is a little higher on the calories but not on the taste buds ;)

Aloo paratha, or the Indian bread stuffed with potatoes, is a popular breakfast dish in India. It's calorie dense, and no matter what, I wouldn't advise you to try it without butter or oil. I'm not very good with pictures, so please excuse the not perfect clicks. But, I promise I will work on them for future posts.

For The Dough 

200 grams whole wheat flour
salt per taste
a little bit of oil
pinch of red chili powder

Take whole wheat flour, add some salt, red chili powder (Indian spice), and some oil. Knead it and keep it aside.

Ingredients for the stuffing

2 boiled potatoes
chopped onions
salt, as per taste

Makes 3 to 4 parathas



Method



Mash the potatoes in a bowl and add chopped onions. If you wish, you can also add coriander and your choice of veggies. Make round balls of flour and set aside.




Take one of the balls and using a rolling pin, roll it out a bit. Try to roll at least 4 of these in the same size preferably. Now, add some of the mashed potatoes in one of the rolled roti. Once done, carefully add the other rolled roti (or bread) on top of it to cover it. Seal the ends (with dry wheat flour, if needed)




Now, roll this out to the size you would like your aloo paratha to be. While rolling, keep your pan on low to medium heat.


Add the rolled roti on the pan. Toss and turn and add a little bit of oil. And, your aloo paratha is ready.

You can skip using oil, but it won't taste as good ;)

Serve with raita or just plain Greek yogurt, with a side salad. In India we also eat this with black lentil and some pickle.

If you like Indian food, this will definitely be a good choice for Sunday brunch.
