Red Pepper and Eggplant Dip

Starting Tuesday, we are officially in holiday entertaining season. If you haven't thought about the upcoming eats that are about to fill our plates, you're running out of time. Thankfully, we are not hosting any gatherings for the rest of this year, but we will be attending several. And because it's bad manners to show up to a get together empty handed, I try to keep a list of easy, yet delicious recipes on hand that will compliment most dinner spreads. I usually focus on appetizers or desserts when I am bringing a dish as a guest, and since we're going to be at my in-law's yearly Halloween chili dinner on Tuesday, I thought I'd bring chips and dip this year since most of the guests will already be loaded up with sweets from their night of trick or treating. I found this Red Pepper and Eggplant Dip recipe on Golden Blossom Honey and thought it would be the perfect accompaniment to a big pot of chili.  

 
What I really like about this dip is that it's a great way to sneak some healthy nutrition onto the table. Not only is it packed with healthy veggies blended together, but when you serve it with some chips made from whole grain pita bread, it knocks its cream based dips out of the water where flavor and nutrition are concerned. This is another great recipe that can be made ahead of time, so if you're needing a quick idea to serve after running the kids around the neighborhood, this one is perfect to whip up the night before or morning of to have a ready made snack or appetizer without added fuss.

Ingredients

2 medium eggplants, cut in half lengthwise

2 large red bell pepper, cut in half, seeded

5 Tablespoons olive oil

4 large garlic cloves, minced

3 Tablespoons lemon juice

1 small fresh Jalapeno pepper, seeded, membrane removed and minced

1 Tablespoon RAW GOLDEN BLOSSOM HONEY

salt and pepper to taste

pita bread

This is our national dish ajvar, deary, but ours is redder as we do not use bell peppers but the elongated, sweet, pointed ones which we roast together with eggplants, then remove the skins and then mince and cook on the stove with oil, sugar, salt and garlic. I should send you some but I am afraid to send anything in glass bottles and they don't pack them in bags or plastic jars, sadly.

    1. We cannot trust the post office with glass, that's for sure. I even went overboard using heavy duty tape to seal up the plastic bottles I am shipping to you this year. Allison likes the sweet peppers but not the bell peppers, so she'd probably be more inclined to eat this if I swapped out the peppers next time.

I've put yours in a green plastic bag and tied it and then put it into the box and wrapped it in white paper, so if the bag is missing or it is open you will now the customs officers were playing with the parcel. Da biyach at the post office asked me, why are you sending her chocolates, don't they have chocolates in America and I am like, why, because it is none of your freaking fecking business, you primitive wench. Too bad I did not say it out loud.....

  5. My oldest granddaughter is the healthiest eater I know (she doesn't trick or treat and doesn't feel like she's missing out in the slightest) and hummus is her jam!! Will you miss hosting? I like to host, but it's also nice to be hosted. :)

    1. I will not miss hosting at all. I find it stressful even though it's for those I love most in this world. We will do a family Christmas breakfast some time in January since I just want to relax Christmas weekend because it's the only one I have off this year. I love that your grand is a healthy eater! Hummus is such an amazing dip, so kudos to her for indulging!
