Poached Salmon with Pears and Apples For The Holidays

Well, I thought I'd be able to skip a week undetected, but y'all are good. To those of you who reached out privately when I missed last week's post, thank you so much for your concern! I've been quite ill for the last 3 weeks, starting with an upper respiratory infection that took my voice for a week, immediately followed by getting hit with Covid. And I don't just mean hit. I mean bulldozed. I have never been this sick in my life. My body is spent, y'all. Thankfully, Covid skipped Allison this time, but Jason and I have both been struggling along wondering if there will ever be a light at the end of the tunnel. I didn't lose my senses of taste or smell, but my appetite is nonexistent. Which has made this the perfect time for Jason to clear out the freezer and make himself dishes that I would normally skip. Yesterday he felt well enough to pull out some salmon and made this Golden Blossom Honey recipe of Poached Salmon with Pears and Apples for his dinner. 
 
 
I was thinking that this would be a fantastic recipe to keep on hand as the holidays are quickly approaching. For one who gets exhausted just doing the most mundane of tasks right now, the husband was able to pull off this recipe without much effort on his part. And, it turned out beautiful. If your family is like ours and will be skipping the traditional ham or turkey for the holiday meals this year, I think this salmon dish is a wonderful change of pace. The fruit topping is festive enough for any holiday table and the honey mustard gives it that extra special kick of flavor that will have your inner Oliver holding out your empty plate while saying, "Please, sir. I want some more."

Ingredients

2 Tablespoons GOLDEN BLOSSOM HONEY MUSTARD
1 1/2 pounds salmon fillets
1 large onion, thinly sliced
2 lemons, thinly sliced
1 cup white wine
1 cup water
15 whole peppercorns
4 Tablespoons margarine
1 lime, thinly sliced
2 MacIntosh apples, unpeeled, cored and thinly sliced
2 Anjou pears, unpeeled, cored and thinly sliced

  1. Wish my appetite was nonexistent LOL
    I don't have a need for a freezer purge as I'm very organised and I know exactly what I have in it, plus I never stuff it too much. Actually it is quite empty currently as Lidl did not have their usual vegetarian week once in a three or four months, so I'm down on flavoured tofu. I did order four packages of veggie sausages with my regular order of honey with cinnamon, cocoa and cordiceps for my heart, so that should arrive next week. I will roast them in the oven with sauerkraut when the winter sets in.

  2. Yes, he did a good job. It's pretty!! Salmon is a favorite for my oldest son and his little family. They make it at least once a week and would prefer this over turkey, I'm certain. Sorry to hear you guys are sick. Covid is a beast. Glad your daughter didn't get it. Here's to being back to 100% soon!

  4. Sounds like a good one indeed. Easy enough to make too. Ugg to the crummy plague. Not fun at all. Hopefully it will soon go away. One post I figured you were lying low, two then maybe the cat would have to send out the dogs to search lol

  5. I’ve been doing a freezer purge now, after realizing I had some 10 month old chicken in the back, along with some honey baked ham from last Christmas. I made a ham and bean soup this week that hit the spot. You were missed! Sending healing hugs.
