Baked Apples with Chocolate Toffee Sauce

Halloween is really sneaking up on us, isn't it? I can't believe it's only 10 days away! Now that my kids are grown, aside from decorating, we don't indulge as much as we used to in the holiday. Don't get me wrong. It's still my favorite day of the year. But long gone are the days of parties and costumes and overindulging in sweet treats. My youngest daughter always loved making caramel apples, but we haven't even done that in a few years. This week I was thinking instead of making the gooey, sticky treat, we'd try a more grown up version and ended up with these Baked Apples with Chocolate Toffee Sauce, a Golden Blossom Honey recipe. 
 
 
This recipe is decadent without the mess of caramel dripping all over the place or having to worry about your apple falling off the stick. For me, they seemed to be so much quicker to prepare than traditional caramel apples. I liked that this recipe didn't call for melting any caramel squares, but used crushed chocolate toffee candy. You can definitely crush your own as the recipe calls for, but to simplify things, most grocers carry the Heath toffee bits next to the chocolate chips in the baking aisle, which really helps cut the prep time down. Easy peasy, virtually mess free, and oh so delicious. These apples are a decadent treat to enjoy while watching your favorite Halloween movies this month.


Ingredients

4 Golden Delicious apples
1 (1.4 ounce) chocolate covered toffee bar, such as Skor
2 tablespoons butter, divided
1 cup apple cider
3 tablespoons GOLDEN BLOSSOM HONEY
1/4 teaspoon ground ginger

vanilla ice cream, if desired

  2. I don’t make any Halloween treats, but a wonderful childhood memory (that my mom made around this time of year) was a cake donut, topped with a scoop of vanilla ice cream with candy corn face and a pointed ice cream cone hat. It was either a clown or a witch, not certain what. I loved that!
