Rustic Strawberry Rhubarb Pie

I've been dreading the start of August all summer. Not particularly because there's anything major happening here this month, but because it's the month that I have to buckle down and get my fall inventory in order for the upcoming September festivals. Y'all, I am stressing the hell out right about now. Thankfully, my bestie is in the same boat because I made her book the same shows with me, so I'm not alone in my struggles. Both of us were starting to feel the burn out this week, and she decided to come over so we could take a break from our hot mess situations for a bit. It was too hot to sit outside and catch up, so we took to the kitchen instead and ended up making this Rustic Strawberry Rhubarb Pie from Golden Blossom Honey. 
 
 
Nothing is sweeter than a time out with your best friend where you can bake delicious pie and catch up on all the latest details and drama of each other's lives. This is a great recipe for a girl's night in, shared over a bottle of wine. It's classy and elegant but really simple to make. According to me anyway. I'm pretty sure my baking style of just winging measurements by eyeballing it stressed the bestie out more than her inventory issues, she might have regretted trading work for time spent with me by the time she left LOL. I know some of you are ready to switch out to pumpkin spice everything now that it's August, but there's still A LOT of summer left to enjoy the fruits of the season! Hocus Pocus 2 isn't out for another 7 weeks, so let's not rush through the remaining days of warm weather yet. And definitely don't let this summer pass you by without making this incredible pie!

Ingredients


1/2 cup hazelnuts, toasted
1 3/4 cups flour
1 tablespoon GOLDEN BLOSSOM HONEY
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chilled butter
1/4 cup ice water
3 -4 cups fresh rhubarb, cut into 1/2-inch slices
2 cups strawberries, sliced
1/2 cup GOLDEN BLOSSOM HONEY
3 tablespoons cornstarch
1/2 teaspoon cinnamon
2 tablespoons GOLDEN BLOSSOM HONEY
1 egg, beaten (for glaze)

  7. I can't believe that we have to think about Fall stuff already!! I went to Home Goods about 2 weeks to get a coffee canister and I ended up leaving with a cart full of Autumn decorations. What the WHAT?! lol The burn out will be worth it when you have a successful season of craft fairs. Good luck! The pie looks beautiful, but I can't bring myself to try a strawberry so I'll be passing on the dessert and cashing in on the girl talk and wine instead.
