Mahi-Mahi with Tomato-Tomatillo Salsa

So it seems that my daughter brought home a lovely souvenir from Colorado in the form of Covid. She started feeling ill late last week, and even though we quarantined her to her bedroom and made her wear her mask any time she left her room, I seemed to have picked it up from her this week. While her test was positive, I did take an at home test that registered negative, but I'm having all of the same symptoms as her so I'm starting to think mine was a false negative. And then we have Jason who tested negative and feels healthier than ever. I told them I didn't think it was fair that I not only didn't get to go on the trip, I got the negative fall out from their adventure. Not cool. Allison and I haven't had much of an appetite this week, so we've been living on Starbucks and cheese sticks. Jason decided to take advantage of the situation and cook something that the two of us normally wouldn't eat- fish. We've had some Mahi-Mahi fillets in the freezer, so this week was the perfect time to try out this Mahi-Mahi with Tomato-Tomatillo Salsa from Golden Blossom Honey.
 
 
While my husband can make pretty much any breakfast dish to perfection, he's never been much of a dinner chef. So when we can find delicious, yet simple recipes that even he can't mess up, it's already a winning recipe in my book. There are minimal ingredients required here, meaning you can make quick work of getting this recipe done in under 20 minutes, especially if you have a good chopper. This is especially handy for amateur cooks to keep tucked away for an easy, yet impressive dish. I've never grown tomatillos before, but according to my best friend who planted them last year, they grow like they are on crack. If you find yourself with an abundance in your garden, the salsa here is a fantastic way to use them up! 

Ingredients

1 cup fresh plum tomatoes, chopped
1/2 cup fresh tomatillos, husks removed, rinsed and cut into fine dice
1 large clove garlic, chopped
1/4 cup scallions, chopped
1/4 cup white wine vinegar
1 tablespoon olive oil
2 tablespoons GOLDEN BLOSSOM RAW HONEY
salt and pepper to taste

4 (6-ounce) portions mahi-mahi fillets
olive oil
salt and pepper

    Blah to that. Got the germs and didn't even get the fun part of the trip. Hopefully you feel better soon. Those tests are a crap shoot. If one has the symptoms they have it, obviously. Was just a blah feeling when I had it. Got it from the germ buckets.

  3. Oh man, sorry to hear. Hope you are on the mend soon. Day 2-4 were the worst for me. I’ve heard that if you don’t have the nasal congestion, you can test negative. Some say to swab your throat instead, but at this point, it’s not like you don’t know that’s what you have! The chicken noodle soup and matzo ball soup were best for me.

    1. Yes, I've thought about your chicken noodle soup a few times, but with this heat I just can't with the soup. I think that makes total sense about it being negative without the nasal congestion. I have the itchy throat and minor cough and it feels like an elephant is sitting on my chest. Also a headache that comes and goes and a lot of fatigue, but nothing nasal. I went and bought more tests, so I am going to retest again with a throat swab. Allison is testing negative now, so I think she's completely over it.

  5. Da eff did she come home if she felt ill, freaking hell? If you bought some AHCC now it would have helped you with covid as well, it cured me in two days last year. Thankfully these new variants are not as nearly bad as the old ones, so you shouldn't feel too bad even if you get it.
    I've no idea what is tomatillo nor mahi mahi LOL

    1. She felt fine for a few days after they got home, then it hit her. I did buy the AHCC, but it's not doing much. I am vaxxed, so I guess this just has to run its course. I think I'll be all over it in another day or two. The cough has stopped, it's just a bit raw in the back of my throat now.
      Tomatillos are mainly used in Mexican dishes. They are wonderful for green salsa.

    2. AHCC will help you not have the consequences on your lungs and heart. It is very important to buy some good herbal cough syrup to cough out the mucus otherwise it will stay on your lungs and AHCC will strengthen your lungs, blood vessels and heart too after covid.

    3. That's a plus, then! It didn't do much to help kick it, but I was at the tail end of the symptoms so maybe it would have sped things up. I need to find a cheaper source for them. My bottle was $75. That's a lot to pay each month. What does it cost you there?

We only have herbal drugstore that imports them, 60 pill bottle is about 40 to 50$ and it is possible that ours are stronger than yours LOL I am currently on some natural supplement based on black nettle and querzetine to prevent the allergy attack in August when one of the strongest weeds blooms here. You should save the rest of AHCC for when you have your biotheraphy, take it a week before to relieve the symptoms and you will see whether it helps. It should as it is given to cancer patients.

    5. PS you don't have to drink AHCC constantly, just a few times a year, maybe a bottle a season, or when you know you are feeling worst during the year.In times of flu and cold etc. and when you have your therapies.

  11. You're not the only one with a hubby that can perfect breakfast but struggle with any meal after noon time.. LOL I'm sorry that you guys got COVID. I hope that they're mild cases and over real quick. This looks DELICIOUS!! I do love mahi mahi, but I've never attempted to cook it.
