Cantaloupe Mousse

The kitchen is usually my happy place, but when it's overwhelmingly hot out, it's usually one of the last places I like to spend time in. I don't like standing over a stove or turning the oven on, so I try to keep ready meals or minimal prep foods on hand throughout most of July when I know the weather is almost unbearable. I also like to keep a variety of ice cream on hand, but because of my tummy issues, it isn't something that I can indulge in every day. That's why I am a fan of homemade mousse. Chocolate or peanut butter is usually my go-to for mousse, but I saw this Cantaloupe Mousse recipe on Golden Blossom Honey recently and thought it might be fun to switch things up a bit this time.  
 
 
Cantaloupe mousse is a cool, creamy, and light dessert that is perfect to have on hand during these scorching summer months. I am a huge fan of cantaloupe because of how juicy and refreshing it is on its own. But using it in a mousse takes this fruit to a whole other level of summertime goodness that I think needs to be tasted by all. And unlike ice cream, since this is not a dairy based dessert, I can indulge in this tasty treat frequently because it doesn't inflame my tummy issues. It's easy to prepare, requires very minimal stove top use, and can be stored in the fridge for several days, making it the perfect ready-to-eat snack when you need a refresher on a hot July day. 

Ingredients

1 package unflavored gelatin
1/4 cup water
1 cup pureed, ripe cantaloupe
1/3 cup GOLDEN BLOSSOM RAW HONEY
1 tablespoon granulated sugar
1 teaspoon freshly squeezed lemon juice
2 cups non-dairy whipped topping

  1. I’ve been making ‘nice cream’ which is frozen bananas blended with whatever flavor you want. I usually do cocoa. Healthier than ice cream and tastes really good!

    1. I forgot all about nice cream! There used to be a machine that would blend the bananas and fruit together and pump it out like soft serve. I think it was called yo nanas or something like that. I'm going to have to buy some bananas and make some nice cream this weekend.

  2. Is cantaloupe what you call the orange melons? I prefer regular melons as these orange ones taste like pumpkins LOL I also wouldn't touch gelatin so I'd put agaragar or some similar vegetarian thickener. I've eaten two or three melons this summer already, but no peaches or nectarines yet. I've even had a mini water melon.
    I see your hydrangeas are doing nice, ours are finished blooming and are now light green before drying out. Currently the whole yard smells of big lilies as it is their season right now.

    1. Yes, that's what we call the orange melons. I don't think they taste like pumpkin though, but next time I bite into one, I'll be reassessing that LOL. I haven't had any peaches either, but we did have watermelon last week.
      Your hydrangeas must bloom much earlier than ours. My white ones are in full bloom right now. The blue and pink are just starting to bud. It will be another few weeks before they turn green here. My lilies haven't even opened yet. I'm patiently awaiting those to bloom. I bet your yard smells amazing. I know it's hot out, but I hope you're taking some time to enjoy the fragrance each day!

    2. Well, since I currently have seven freaking cats (Both Vlasta and Dzelyana have had kids on Easter and I have five kittens - Dobrila, Darinka, Ilinka, Petrushka and Danilushka) I am often in the yard.

    3. That's a lot of cats to look after. Emily gives me a run for my money and she's still a tiny, sassy little thing. If I lived closer, I'd probably take one of your cats though. Been thinking of adding another to the mix, but we just put down one of our dogs in May and I just don't think Jason's heart is up for adding any new pets right now.

    4. What? You now have just one dog? Is that two lost in recent two years? Good thing you have Emikins to comfort you. I think Emikins would be good friends with Dobrila, she is the oldest, older a week than the others.

    5. I still have 2 dogs and Emily. I have the male boxer and the male dachshund. We had to put the female boxer down on our anniversary. She was paralyzed for over a year, but then started having massive bleeding in her stools, so it was time :(
      Emily is a freaking bitch. I don't know why I love her so. She bullies the little dog all day long, screams bloody murder when I step outside, but when I come in she wants nothing to do with me. But at bedtime she wants to cuddle and will pounce on my head until I make space for her around my chest. She's exhausting. Dobrila needs to come and put her in her place LOL

  3. My grandfather loved cantaloupe. I didn't like it as a kid, so I haven't really tried it as an adult. Maybe this mousse would be a good reintroduction to it. Making the reacquaintance is long overdue, I suppose. :)

    1. If you try cantaloupe, lmk what you think. I'm always in shock at the things I hated as a kid that I absolutely love as an adult.

  5. NON-dairy whipped cream? I'm all in! This sounds and looks delicious. We've been on a yellow watermelon kick. It's sweeter and the consistency is more solid than the looser flesh of a red watermelon. Although, I'm happy with both colored fruits.
