Banana Upside-Down Cake

My daughter moved to Colorado and my best friend moved to Georgia this week, so needless to say, I've been feeling a bit emotional these last 7 days. I had an infusion appointment on Wednesday that I couldn't miss, so I had to stay behind while the rest of the family made the 15 hour drive to The Centennial State to help her get settled in. Jason called last night and asked if I was doing productive things since I had the house to myself and I had to be honest and say no. Instead of checking off things to do from my work schedule, I made a cake and binge watched trash television on Netflix all week. This is something I never do, so it was kind of a welcome indulgence for me. On the binge-list was Inventing Anna and The Ultimatum, as well as this divine Banana Upside-Down Cake from Golden Blossom Honey. 
 
You should have everything needed to make this cake in your pantry already, so when you're in your feels too, no need to peel off the 2 day old leggings and head out to the store for ingredients. This is a scrumptious cake no matter what emotions you're feeling. Happy or sad, it hits the spot. The only thing I would have done differently here is add chopped walnuts or pecans to the banana sauce before pouring in the cake batter and maybe doubling the amount of sliced bananas simply because I love me some caramelized bananas and the more the merrier, I say. I'll make those additions the next time I bake this cake, which seems like some fall inspired changes, but while it's still summer, you could add a scoop of vanilla ice cream to the top of your slice for an indulgent warm weather treat. 

Ingredients

Bananas:
1/2 cup butter, room temperature
1/4 cup brown sugar
1/4 cup GOLDEN BLOSSOM HONEY
2 ripe but firm bananas, sliced 1/4-inch thick
Cake:
3/4 cup sugar
1/4 cup butter, room temperature
1 egg
3/4 teaspoon vanilla extract
1 cup flour
1/2 tablespoon baking powder
1/4 teaspoon salt
1/2 cup milk

  1. Well that sucks that everyone is moving away at the same time. Well 2 people anyway. You stink or something? lol Sometimes you just have to splurge and sit back and go to it. Even with netflix trash.

    1. I must have some bad body odor or something. My candle lady is moving to Arizona in October, so the hits just keep coming.

  2. What? Jen left you too? How positively nasty. Why did she move to Georgia the lovely pro/life state?
    I do love anything with bananas as you already know. Did you caramelise them first?
    Hope your infusion at least went well. Did you try taking AHCC to relieve the consequences of infusion?

    My heart hasn't been well all year long because there hasn't been work this year so far, so I've been feeling lost and then some more lost. And I have no solution. Plus the situation in the country makes us all even more depressed with prices of everything going up on a weekly basis. Some things are already two or three times more expensive than this spring.

    1. No, Jenn stayed here, though she was in Tennessee all week. I swear, I had nobody here for me these last 7 days :( My other bestie, Erin left. Her hubby got a great job opportunity in Georgia that they couldn't pass up, so off they went. Aside from the job, the weather is ideal, too. You get a few scorching months in the summer, but the rest of the year is pretty mild and no snow. It's on our top 5 places to relocate to when we're finally ready to make that leap.

      I thought of you the whole time I made this cake and how it would be nice to share some of it with you with a cuppa tea. I know you love bananas. They caramelize on their own in the sauce in the oven, so I didn't have to do that beforehand.

      I honestly forgot all about the AHCC, but I just went and placed an order for a bottle on Amazon. Thanks for the reminder!

      I'm sorry to hear that work is still down for you, and I totally feel you on the inflation going on across the globe. I know it's probably not ideal for you, but could you go back to teaching for a bit until more steady work comes your way? What about tutoring sessions?

  3. I would have been upset to not go and get her settled. Do you have plans to visit this year? Yes, always stuff weighing on my heart. Mostly, I’m worried how long my mom can stay living alone in her condo. She’s 83 and her short term memory has been going downhill.

    1. Yes, we'll go see her in the fall. I told her I'd probably prefer visiting her then anyway because by then she can have all the noteworthy places to see down pat and we can pack more fun in our schedule than blindly stumbling along.
      That is something heavy for the heart and I'm sorry to hear your mom's memory is in decline. Do they not have home health aids there to come check on her and maybe assist with daily chores and such so she can live independently a little longer?

    2. Well, they do. But it went horribly when she had them coming in for my dad in his last few months. I suspect she is paranoid schizophrenic (high functioning) so strangers in her house doesn't go so well.

  4. They moved already? I feel like you just told us about the upcoming move and that there was still months to worry about it! I can't imagine how you're feeling. I got a taste when my nephew (who I practically raised from a newborn to the age of 6) moved to North Carolina. Are you still planning to relocate? I feel like you've mentioned Georgia a while ago for yourself. Would you consider moving there?

  5. I hope the infusion went well. Congrats to your daughter on her move, but I'm sorry she moved too (you know what I mean). The worst thing about the kids growing up is that they aren't in the home anymore (even though you want them to be fiercely independent). Sorry your friend moved!!! Is she close to Savannah? Maybe you can do a girl's trip there in the future, it's so lovely. I recently did the Netflix binge too, and I usually don't. I watched Anna and Love & Gelato (just because I wanted to see Italy scenes, lol).

  6. Yes, GA is in the top 5 places we're looking to relocate to. Though TN is at the top of our list. We had hoped to have already been gone by now, but we had to get our youngest through high school first then we were waiting out the housing market inflation. It seems to be coming down now, so I have high hopes we can have our house on the market and be ready to go by next summer.
    Do you still get to see your nephew? That must have been really hard letting him go!

It'll make it easier for you to go though, when your time comes, if you are still thinking of moving. :) Silver lining and all that stuff... Good luck to your daughter!
