Cube Steak Sandwiches with Mushrooms

It may not seem like it quite yet, but trust me when I say that Father's Day is coming in hot this year. Thankfully my girls are grown, so they are fully responsible for picking out Jason's gifts by themselves, though they do still ask my opinion on what he'd enjoy most for every special occasion. And I always tell them the same thing. Food. You can never go wrong with the gift of food when it comes to their dad. And honestly, I think most dads enjoy food gifts. I'll be making my father-in-law his favorite chocolate chip cookies, but Jason is more of a meat and potatoes kind of guy so I thought the girls could make him Cube Steak Sandwiches with Mushrooms, a quick and simple recipe from Golden Blossom Honey. 

 
This is a great recipe for those who have minimal kitchen skills. I won't call out which daughter I'm referring to by name, but it isn't the one who still lives at home with us LOL. The first time I made this for Jason, he thought it was something that needed ketchup before he even tried it. Just no. This recipe doesn't need a single thing added to it. Just let it simmer, put it on the toasted bread and leave it be. No other condiments are necessary. This cube steak is great with steamed veggies or a side of fries. Sweet potato fries are usually our pick when fries should be on the menu. There are always so many suggestions for lunch with mom on Mother's Day, but dad deserves something yummy for his day too. This recipe can be tossed together in under 20 minutes, so even if the kids are limited on time with dad this year, there's still plenty of time to squeeze this sandwich in. 

Ingredients

3 tablespoons olive oil, separated
4 (4-6 ounce) cube steaks
2 large portabella mushrooms, sliced
1 teaspoon dried rosemary
8 scallions, chopped
1 cup canned beef broth
3 tablespoons GOLDEN BLOSSOM HONEY
4 thick slices country style bread, toasted

  1. Cube steaks is a total throwback to the 60’s and 70’s for me. I don’t think I’ve seen them at the store since then! I’ll have to look. I have no idea what we will do for Father’s Day. Probably just be the two of us with Middle Child.

    1. For real! I don't see it often either, but the meat department isn't one I frequent. Jason usually buys what he wants from the butcher, but I remember my mom always made cube steaks when we were growing up. Probably because it's a cheap cut of meat and she had 4 mouths to feed.

    1. You don't like ketchup?! Say it ain't so! I love it.
      Mariah cannot cook to save her life, though she did subscribe to one of those box meal services that they send all of the ingredients along with a recipe and step by step instructions, so that may end up teaching her after all. Her boyfriend is a pretty good cook and makes most of their meals. He likes doing it, so I guess that works out for them.

  5. I agree that food gifts are fool proof for most men! lol I think I'll be making a tray of sausage and peppers. It's an easy enough dish to make, but not something I do often b/c I'm not a huge fan.

    1. Jason would love the sausages, but not the peppers. That would work for me though. I'd give him my sausage and I'd take his peppers. It's good when opposites attract LOL

  6. What a good way to use cube steak. I haven't purchased one since the oldest two left home, but I remember they liked the flavor and it was the most affordable beef ever.

    1. We ate it a lot growing up because of how affordable it was. I always thought it looked weird though, the texture. But I don't recall ever not liking it. I think mom always smothered it in gravy back then. And you can never go wrong smothering anything in gravy!
