Roasted Potato Sandwich Appetizers

Let's talk about The Big Game this Sunday. Are we watching for the game, the halftime show, or the food? For us, it's ALWAYS about the food! But I'll admit, this year's performer line up has got me and my girls all up in our 90's and early 2000's feels. When that show starts kids, you better watch out cause you're going to get a glimpse of who your mamas used to be lol. But first, food. I've been tasked with bringing an appetizer and a dessert to the party this year, and while our hosts all but demanded buckeyes for dessert (lovingly, of course), at least I got to pick what appetizer I wanted to make and decided that nothing was going to top these Roasted Potato Sandwich Appetizers that I found from Golden Blossom Honey. 
 

 
In my opinion, finger foods are always best when it comes to game time viewing and snacking. I like to keep things simple and easy to grab, so these little bite sized snacks are perfect for your game day spread. There are minimal ingredients in this recipe and they can be tossed together in under 30 minutes. They hold together just fine because of the thick filling, but I'll dress mine up with festive football themed picks, just because. What's great about this recipe is the filling is fantastic for more than just a potato filling. If you want to skip the potatoes altogether, it makes for an awesome dip. I use it for pretzels and raw veggies, but it could also be made ahead of time to use on your morning toast or bagels. Score! There's no competition when it comes to this recipe. It will be the real MVP this Sunday.
 

Ingredients

2 large baking potatoes
2 Tablespoons olive oil

Filling:
6 Tablespoons low-fat cream cheese, softened
1 Tablespoon GOLDEN BLOSSOM HONEY
4 Tablespoons sun-dried tomatoes in oil, drained and cut into thin strips
2 Tablespoons scallions, (green part only), minced
salt and pepper to taste

  1. These look so tasty! What great finger food. I wouldn't mind these for a party! Although we don't do the Superbowl here finger food is always a good idea at a party! :)

    Hope that you are having a nice week :) It's been a big week here for the kids, their first week back at school after the summer holidays!

  2. That’s an interesting filling for the potatoes. I doubt I’ll watch the game, but I might pop in for the show. I also got a kick out of watching a commercial that will be featured, as it has one of my fave reality stars from The Real World and The Challenge. And I will take a few buckeyes!!! (Probably most people are going, HUH?)

    1. I thought it was interesting too, but oddly enough, it worked. We didn't watch the game and were a little let down by the halftime show, but the food was still kick ass LOL

    1. Yes, I like those performers. We went to a Snoop concert 3 years ago and it was one of the best ones I've been to. Jason got sick right before the show and missed out, but me and my girls had a blast. He still whines about missing out.

      You'd probably not like the filling on this one, deary. I know you don't like cream cheese, but I can get behind roasted potatoes any day of the week with or without the filling.

    2. I do take cream cheese occasionally, like once in three or four months, I will buy a cup of Philadelphia style cream cheese and eat it with a bun or crescent. I actually bought a cup of new sour cream with mushrooms for Saturday dinner, as it is a new product, and I will eat with some fresh pastry. I don't do it often, but sometimes I feel like it, probably when my body wants calcium.

  5. Oh yes, that filling is going in a football shaped bowl with some veggies this weekend. We'll watch the game start to finish (and be happily exhausted the next day).

  8. What an interesting sandwich! With a great filling! I'm a huge fan of potato, so bring it on. (I could care less about football, but I'd tolerate it if these sandwiches were involved.)

    1. I thought it was a bit of a let down, tbh. I mean, me and my girls were ready to shake it like a Polaroid picture, but we just weren't feeling it for some reason. Probably hyped ourselves up for it too much before hand and had bigger expectations than what was delivered.
