Spiced Lebkuchen with Citrus Glaze

I think I've been able to cope with a lot of the changes we all had to face when the pandemic hit, but the one thing I have struggled with is lack of travel. We used to squeeze in a trip or two a year, but since January of 2020, we have not taken a family vacation. I am longing to hop a plane and explore distant lands, and the one place that I had hoped to have visited by now are the German Christmas Markets. As much as I don't love being out in the cold and snow, there's just something so inviting and cozy about their markets, something tells me I could spend all day browsing them, hot cocoa in one hand and a cookie in the other. After an extensive Pinterest and Instagram search of any and all pictures I could find on the German Christmas Markets, I was inspired to bake some Spiced Lebkuchen with Citrus Glaze this week from Golden Blossom Honey's recipe index. 
 
 
If I can't be in Germany for the holidays, these cookies are the next best thing. I love soft batch cookies, and if you do too, then you need to make a batch or three of these this holiday season. They are so soft and delectable, and with the citrus notes, they embody the flavors of Christmas perfectly. If you're stuck at home this holiday season too, take comfort by curling up on the couch while watching cheesy Hallmark movies with a big stack of Spiced Lebkuchen and a hot cuppa cocoa. And send out a prayer that we can all meet at the German Christmas Markets next year!

Ingredients

Dough: (make one day ahead)
2 cups flour
1/2 teaspoon ground nutmeg
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup SILVER BLOSSOM HONEY
1/2 cup dark brown sugar, packed
1 large egg
1 1/2 teaspoons grated lemon zest
1 1/2 teaspoons grated orange zest

Citrus Glaze:
1/4 cup confectioner's sugar
2 teaspoons lemon juice
1 teaspoon orange juice
1/2 teaspoon grated lemon zest
1/2 teaspoon grated orange zest

  1. Lebwhatchen? LOL They do look uber lecker to use German word for tasty :) I don't think we will be visiting Deutchland any time soon as I hear they are planning to make vaccination obligatory from next year and will be banning non vaccinated souls even from shops, which is something I cannot wrap my head around. How can you deprive anyone from buying food, under any circumstances??? I think there will be wars and riots soon. In my country most definitely as our prick of a dictator has no intention of stepping down and will be using criminal gangs against people as he already is doing now while we are protesting some tyranical new laws of his. We are blocking almost all roads in the country on Saturday afternoon and he will most probably send his nazi mobsters and brutes onto us. Last week he sent bulldozers onto peaceful protesters. And then when a man jumped onto the bulldozer and saved the people from death, he sent police after him and also mobsters, so the men will have to run away from the country probably.

    1. Yeah, I saw that on BBC the other day. I imagine people are really going to start revolting here soon the more these mandates get pushed on them. I'm vaccinated, but I do not believe anyone should feel forced into this vaccine. And holding basic necessities over heads until one conforms is going to start mass riots soon. Who would've thought we'd see this kind of thing happening this day in age?

  2. Well, my son and his wife are supposed to be flying to Munich in a few weeks for their two year delayed honeymoon. My son worked in Munich in summer 2016 and has wanted to see their Christkindl market ever since. With Covid ramping up, they may not be able to go. I feel so bad for them. He planned a beautiful two week trip all over Europe for them.

    My holiday trip would be to Williamsburg to see the decorations and eat in the taverns or a ski resort town in Colorado or Utah,

      I'd love to go to WIlliamsburg too. I bet it is so gorgeous during the holidays!

  3. I hope that you get to explore the German Christmas Markets soon! While we haven't had any major vacation since COVID19, we have been trying to scratch the itch by exploring the New England area. I would love to visit somewhere that's normally really warm in the Winter. I dislike the heat and humidity, so I feel like the Winter would be the perfect time to visit a place like that.

    1. That's why we save Florida and California for winter travel destinations LOL. I laugh with glee when people back home are complaining about snow and I'm hopping around in shorts and a tee shirt or lounging on a beach!

    2. Omg, I’m the same way. We were in Arizona once for Easter and heard it was snowing back home. We were literally jumping up and down while eating breakfast outdoors! Lol, so mean!

    3. Karma paid me back. I thought I was getting nice weather in NOLA, then that snow storm hit. While it only rained and was ice freaking cold there, I couldn't laugh at the folks back home getting dumped on with snow because we were about as miserable.

  6. these looks delicious! I've never tried lebkuchen before! :)

    We've done a little local mini break, as we haven't travelled far since 2019 either! I don't know if we will do more travel next year but it's likely to be small trips close to home for a while as our state borders and the rules for crossing them change frequently whenever a rare covid case pops up!

    Hope you are having a good weekend! It's a busy one here with lots of fun events, last night was a Christmas event at a theme park!

    2. Hopefully not, since it's awhile away still (crossing fingers and toes for her). Spain is where my bff wants us to go, and believe me, I'm not adverse. It does look lovely. :) I'd rather get Venice checked off of my list first though (before I get too old to get in and out of the boats, hahahahaha...not kidding). :)

    1. Is it snowing in Canada now? We had a light mist of it a few weeks back, but it was gone the next day. If it can hold off for one more week until craft season ends, I'll be thrilled and won't complain (too much) about it the rest of the season.

  12. Isaak and I love lemons and limes. He likes them so much, he wore a lemon shirt any chance he got. I should make these.

    Winter destination is here. We actually have a family feud going on. My oldest sister is pissed we're not getting together for Christmas Eve to have a meal. My youngest sister with all her kids and some being special needs is the one that called it off. Of course I'm in the middle. We are getting together on Christmas day to play games, and distance eat snacks.

    Travis' family never gets together.

    One of my old students posted that he went on a Christmas bus tour. They took him different iconic places in the US that has Christmas movies. It looks like fun.
