Apple-Cinnamon Kugel

Friday. Fall. My Second and third favorite F words. Sorry, that's a little inside joke from some of my Facebook friends. But I love Friday and I am totally stoked that it's finally fall. And, the heavens opened up and sent drizzling rain and a chill into the air on Wednesday, making it the perfect weather to welcome the season in right. With the nip in the air, a new crop of apples in my pantry, and a rumble in my tummy, I had an itch to crank on the oven and make an autumn recipe this week. I couldn't decide what kind of dish I had in mind, so I started scrolling through Golden Blossom Honey for a little inspiration and came across this Apple-Cinnamon Kugel recipe and my curiosity was piqued. 
 
 
I really didn't know what to make of this recipe because honestly the ingredients aren't normally some that I'd think to mix together. When I think of apples and cooking, I think along the lines of baked goods, or maybe even pork. But noodles? Not on my radar. But, I was feeling a bit adventurous and decided to go for it anyway and see how it turned out. And mmmm, I'm glad that I did because even if you're scratching your head at the ingredients, I can tell you, it works. I don't know why it works, but it does. It keeps your taste buds guessing. My first thought was it tasted like an elephant ear, then nope, tastes like an apple pie. And then I didn't know what it reminded me of, I just knew that I wasn't going to stop eating it until my bowl was empty. If you're on the fence about this one, take my word for it and give it a try. You may just end up finding a new fall favorite recipe.

Ingredients

1/2 cup golden raisins
1/2 cup GOLDEN BLOSSOM HONEY
2 teaspoons ground cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
4 ounces Neufchatel cheese, or cream cheese
1 1/2 cups cottage cheese, low-fat or regular
1 cup sour cream, lite or regular
2 tablespoons cornstarch
3 eggs
3 Granny Smith apples, grated
8 ounces wide egg noodles

  1. We went last weekend to my favorite orchard or cider flights and their famous Fruits of the Forest Pie. Will go again to pick apples in a week or two when they have yellow delicious.

  2. It browned nice and golden in the oven! Bet it smells nice and lovely!
    We've had terribly cold nights last few days, below ten degrees, so I had to wake up in the middle of the night and throw a fourth blanky on my frozen self, but they say it will again go over 30*C during the weeekend, so it is really a crazy roller-coaster here. My neighbor is even burning wood in his house.
    We no longer have mellons and peaches and nectarines here, so I started eating grapes. I imagine pumpkins will start arriving soon, mums are already appearing in some shops.

    1. I had to break out the heated blanket a few times already. 4 blankets I would feel like I was suffocating LOL. 2 is my maximum.
      I bought my mums about a month ago, but they are looking a bit raggedy. I might just have to give them a good deadhead to make them come back to life.

    2. You think the squirrel will return this your to pose next to your mums?
      Two blankies just ain't enough when it is cold here, and it is still not cold enough for me to take out my duvet. Speaking of cold, I bought a lovely winter jacket in Novi Sad yesterday. I did not need it, as I bought another navy blue one two weeks ago, but this one was what I've been searching for years = below knees, with a hoodie, very long and very simple and it has two faces, black and olive. The bag was so big it always did not fit on a bus seat next to me LOL and I kept hitting people with it in the streets.

  5. I’m rreeeaallllyyyy curious to know how it tasted like an elephant ear??? Lol. This does look like an odd combination. I guess I would taste it, but I’m not sure I’d go out of my way to make it unless I was really feeling adventurous for a day.

  6. Headed over to the Golden Blossom recipes now (you've made that site a staple for me, lol). I honestly wouldn't even try it, but since you recommended it, I'm all over it. It looks terrific, and I'm super curious to give it a try.
