Pound Cake w/ Ice Cream Nuts & Chocolate Sauce

Raise your hand if you're excited about these warmer temps we've been having lately. I'm over here waving both of my hands wildly. This is my favorite time of the year, when you can ride around town with the windows down, just letting the wind blow and the warm breeze wash over you. We love long car rides here on warm days, and we usually just drive with no destination in mind. And, even though we never intentionally set out for it, we almost always end up somewhere that there's ice cream. But, because I'm still prepping for this week's craft fair and Jason is finishing up some house projects, we haven't taken that first late spring/early summer drive just yet. But, thankfully there have been some pretty good sales on ice cream here and I've been taking full advantage and stocking up. To sweeten things up this week, instead of just scooping out the cold, creamy treat into bowls, I thought I'd finally make this Pound Cake with Ice Cream, Nuts and Chocolate Sauce recipe that I've been saving from Golden Blossom Honey since last year. 
 


I'm a vanilla ice cream girl through and through, but give me all of the toppings! This recipe excited me because it doesn't have just one topping to indulge in, it has 3! Nuts and chocolate are usually a given on my sundaes, but I'll admit, I don't usually toss toasted coconut in there. However, I was pleasantly surprised at the additional flavor and texture combination it lent to the finished product and will for sure be stocking up on coconut to add to my ice cream concoctions all summer long.

Ingredients

Sauce:
8-ounces semisweet chocolate chips
1/2 cup butter
3 tablespoons GOLDEN BLOSSOM RAW HONEY


1 purchased pound cake cut into 1/2 inch slices
1/4 - 1/2 cup Grand Marnier or orange juice
vanilla ice cream, or flavor of your choice
1 cup chopped walnuts, toasted and tossed with 1 tablespoon GOLDEN BLOSSOM HONEY
1/2 cup flaked coconut, toasted

  1. Cute lil' polka dot plates! For some reason I can eat ice cream only in summer, in all other parts of the year it gives me sore throat at just one spoon, so I haven't yet started the season as it is still occasional cold here. We have a new ruby chocolate ice cream this year so I will try that one for sure.

    2. Have you tried ruby chocolate? It's been the latest craze for last two years or so. We haven't had it in ice cream before, but we did have some strawberry flavoured flips covered in ruby chocolate and it was lovely.

    3. I have not tried it. I don't think I've seen it here ever. Then again, I hardly go into the grocery stores these days. Since the pandemic, I online order my groceries and Jason picks them up curbside when he gets off work. I might have to make an exception and go on a scavenger hunt for this ruby chocolate now!

  2. I have always been a coconut fanatic. Yum!
    No, I’m not really a car ride person. I can handle about an hour of being in the car, but then my back hurts, etc. But I do love going to new places, so a road trip with a destination is great. We are going to Amish Country today. It’s about an hour and a half from us.

    1. I love coconut too. I think it's one of those flavors though that you either really love or plain hate.

      What did you do in Amish country? I always love driving through Amish towns. They are so cute and I love their horse and buggies!

  4. A car ride with no destination would drive me nuts, but I'm all for a road trip! This recipe looks delicious. I'd swap the vanilla for chocolate and then dive right in. :)

    1. Idk why, but I just can't do chocolate ice cream. Give me chocolate everything else, but ice cream is just a no for me.

  5. Beautiful post! Very yummy! We haven't gone anywhere in ages. We are doing good to go into the City these days! But yeah, I think it's essential for any relationship to do some traveling. Great to get lost together, especially, before you get married. It can be a deal breaker in some cases.

    I used to like car rides in summer, until I drive for 8-12 hours a day for work. Then nope. Enough of that.

  11. I'll be over in a min. Ha! I have such a sweet tooth. I made a peace cobbler, to go with vanilla ice cream. It was good. Now I have to figure out something for the 19th, Isaak's birthday. He likes brownies.

    I don't mind car rides, but I'm best when Travis drives. I get so sleepy. It's like the car rocks me to sleep.

  13. Pound cake with chocolate sauce and icecream and nuts idea is good. Actually they are my favourite combination. We also like Turkish baklava dessert with icecream very much.
