Orange Walnut Coffee Cake

I just looked at the calendar and realized that Easter is is right around the corner. Is it me or does it seem to get here earlier each year? This will be the second year that we won't be celebrating with family and that makes me really sad because I feel like the longer this virus continues, these family traditions are going to go by the wayside. I sure hope I'm wrong though. All I know is I am so ready for life to return to how it was before. Even though I won't have to prepare a big family meal, I can't let the holiday slide without a little something special on the table this year. We're having false spring right now and that has me in the mood for citrus flavored treats. So, I thought not only would this Orange Walnut Coffee Cake from Golden Blossom Honey help usher in real spring soon (at least I hope it's soon!), but would also make a lovely addition to any Easter breakfast, lunch or dinner spreads, too. 
 
 
I usually make my coffee cakes with a cinnamon crumb topping, but thought the walnut topping was an amazing change of pace for me. It added a fantastic amount of texture to the cake that usually isn't there. This is a very simple coffee cake to toss together, but will be a show stopper on the holiday table. While the recipe didn't call for it, you can dress up the top of each cake square with dried orange slices, berries, or sprigs of mint, but it's not necessary unless it's something that you want to do. Pair it with your favorite milk, tea or coffee and it will be a recipe you return to again and again all spring and summer long.

Ingredients

Cake:
1/2 cup butter, melted
1/3 cup milk
2 eggs
1/2 teaspoon almond extract
1 3/4 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon orange zest
Topping:
1/2 cup butter
1/2 cup walnuts, coarsely chopped
1/4 cup sugar
1/2 teaspoon ground nutmeg
1 tablespoon milk
1 teaspoon orange zest
1/4 cup SILVER BLOSSOM HONEY

  1. What a lovely and creative idea to put blueberries on top to achieve the orange blue contrast plus the green, deffo one of your prettiest cakes evah! I'd pretty much anything with oranges in it, I eat about 700 oranges a year LOL

    1. Jason probably would too, but he gets so frustrated peeling them, he'll only eat them if I peel them for him. You would think he'd just take the easy way out and use a knife, but nope. Grabs an apple or banana instead LOL.

  3. That looks lovely. I’m not sure what we will do this year. None of us will be fully vaccinated by then, so I doubt we will do anything. I’m still making Easter baskets for the grandkids.

    1. We just had a round of covid hit the extended family with one death from it last week, so we're reeling from that. Definitely not the time for our family to be together. The elders have all been vaccinated, but the younger ones have not, so we're not taking any chances right now. Hopefully the timeline of having vaccines available to all by the end of May holds true.

      Hurray for baskets for the grands. I miss making up Easter baskets. Mine just want Starbucks gift cards these days. I'm not in a hurry for grandkids, but I'll be excited to make up baskets again some day.
