Glazed Carrots for Easter Dinner

As the theme to Friends goes, it hasn't been my day, my week, my month, or even my year. I feel like I've been running in circles for ages now and not a thing is getting done around here, so I thought that I would keep this week's Golden Blossom Honey share short, simple and sweet. I've barely thought about what we'll be serving for Easter this year, but thankfully we aren't gathering until the weekend after since Mariah can't make it home until then. Since it's just going to be the immediate family for dinner, I won't be making too much, but I did think about putting these Glazed Carrots on the menu because what's Easter if you don't have carrots on the table?
 
 
The description on Golden Blossom Honey says that this recipe appeals to adults and children alike. I'd like to point out that my dogs have never liked carrots. They chew them up and spit them out on the ground leaving a huge mess. However, my boxer, Rocky, who knows better than to steal food, gobbled up half of this bowl when I turned my back for a few minutes. I was lucky to snap these pictures before he dug in! So, not only does this recipe appeal to adults and children, apparently it's irresistable to dogs as well. I did manage to eat a few carrots of my own before plating them up and before the carrot thief stuffed his fat nose in them, so I can attest that they are quite tasty and should definitely been on your holiday table this year. 
 

Ingredients

1 tablespoon butter
1 (16-ounce) package baby carrots
1/2 cup apple cider
1 tablespoon GOLDEN BLOSSOM HONEY
2 tablespoons fresh chives, chopped

  1. Did not you have this one before here, deary? I think you did. They do look lovely, though, who does not like carrots! I've breaded some pickled red peppers today for lunch to see how breading them goes! I know some people bread pickled cucumbers, so I decided to try it with peppers. I've also made mousakka yesterday, as I haven't made it for like five years, and I had some wheat sprout veggie stuffing in the fridge, so I used that to put between the potatoes and it was like the real thing! Haven't ate like that in years, methinks.

    1. No, not this one. I did carrots and zucchini before, I believe.
      I never make mousakka because I hate how long it takes to slice all of those veggies. I did buy an attachment for my mixer that slices, so I really should pull it out and see if it does any good with the veggies.

  3. I'm not a huge fan of cooked carrots, but maybe I should try these.

    I don't know what we're doing exactly. I think getting together as a family. My parents, older sister's fam, and us have all had our vaccines. My younger sister's fam has not. My sister is nursing Margaret, so she's waiting until more tests are done for nursing mom's. They never go anywhere, but we could spread it. Possibly we'll do it outside.

    1. We did end up doing a small gathering since we are all vaccinated (except Allison, which she's finally eligible so she'll be getting her shots soon!)

  4. My family likes anything potato related, but roasted veggies are my favorite, either with balsamic glaze or Everything But the Bagel seasoning.

    1. I have never tried putting Everything But the Bagel seasoning on my roasted veggies, but I am definitely doing that next time. Sounds delish!

  5. You know, I've never had carrots on Easter!! We love carrots and should make them way more often. My favorite Easter holiday dish is the pizza rustica, or Easter meat pie. So yum!
