Beef Stew with Raisins for St. Patrick's Day Dinner

I am not Irish by birth or by blood, but there is something about Ireland that calls to me. I feel it all the way in my bones that it's where I am meant to be. Don't get me wrong, I am a proud patriot, but I dream of retiring to a small thatched roof cottage somewhere on the Wild Atlantic Way where I'll spend my days happily tending a little farm. Cozy nights nestled in front of a peat burning fire munching on homemade soda bread is all this girl needs to live happily ever after. 
 
With St. Patrick's Day on the horizon, I've been a little bummed that I haven't had time to put out my holiday decor since it's been 24/7 home renovation here for the past month (more on that next week). This is the first time in 15 years that I haven't decorated for the occasion, but you can be sure I'll make time to make an Irish inspired meal for the holiday. If you need a little inspiration for your holiday meal this year, why not try this Beef Stew with Raisins? It's a Golden Blossom Honey recipe, so you know it's going to be good!
 
As most of you know, my husband is Irish by blood and definitely appreciates a hearty Irish stew. We stopped at this charming hotel close to The Cliffs of Moher for dinner a few years back and I could tell Jason was pretty giddy to order a big bowl of authentic Irish stew. I've been playing with recipes since we've returned, and have to say that this recipe ranks in the top 5 of what I've made so far. The only criticism Jason had for the dish was it was missing potatoes. The recipe does say you can serve it over noodles or red potatoes, which would even it out, but if you're looking for a true one pot dish, just dice a few potatoes and toss them in at the end with the carrots and you'll be good to go.

Ingredients

3 pounds boneless beef chuck, cut into 1 1/2 inch cubes
1/2 cup flour
3 Tablespoons olive oil
1 large onion, chopped
2 (28 ounce) cans tomatoes, chopped
salt and pepper to taste
1/4 cup apple cider vinegar
1/3 cup GOLDEN BLOSSOM HONEY
6 large carrots, cut into 1/2 inch slices
3/4 cup raisins
1 teaspoon ground ginger

  2. Great! We think that Irish Stews look like ours very much (Turkish Cuisine). In Irish Cuisine, We dont think so we feel thar we are strange. This recipe will be a really perfect Sunday dinner option. Thank you for sharing. Have a great weekend to you my friend.

I'd probably make a cringeworthy face if I was to find a raisin in my stew, let alone a whole handful LOL I'd move somewhere where they speak English, but most places scare me because of the potential floods, quakes etc. I do prefer the clear thinking, disciplined and logical Brits to mostly spoilt and superficial Northern Americans (which is so obvious these days in the way they view the whole circus around Ginge and Cringe), so I'd probably move with you to Ireland myself rather than to Canada or USA.

  4. We don't celebrate St. Patrick's Day, but I may just to make this recipe. I'm pinning it and making it the next time stew meat goes on sale! The last time I made stew, it came out soupy and then I never tried again. Yours looks thick and delicious.

  5. Raisins in beef stew is new to me, but why not? My husband is 75% Irish (and looks it!) The man loves his potatoes! Lol! I’m mostly German, but have never been to Germany. My son worked in Munich the summer of 2016 and from what he told me, I think I’d fit right in.

  7. We have a lot of soups/stews. I know the weather is getting warmer soon, but I’ll still have them. It’s easy and good.

    I’ve never had raisins in it, but I’m always up for something new.

  11. Top 5 sure is a win indeed. Ireland sure seems like it has a slower pace of life. But then I can find what your describing, mostly, within an hour radius in many a spot around me. You know that when you've visited over 30,000 friggin properties. Uggg.
