Honey Yogurt Raspberry Fudge Torte for Valentine's Day

For some of us, Valentine's Day is going to look a lot different than it has in years past. I think the majority of us will be staying home for a change, so this is the year where loved ones can get creative in the kitchen and try new recipes to celebrate the day. I mean, what better way to spend the day with those you love than making memories and eating good food together? Golden Blossom Honey has an amazing recipe list where you're sure to find a lot of great options for dining at home this Valentine's Day, but one of my personal favorites is this Honey Yogurt Raspberry Fudge Torte.
 

The nice thing about this recipe is that it doesn't actually call for fresh raspberries, which tend to spike in price for the holiday. Instead, you flavor the center with raspberry jam, which is much less expensive and easier than messing with making your own raspberry puree. The tortes bake up light and fluffy with a cake-like consistency, but rich in chocolatey flavor like fudge. Who needs a night out at an overpriced restaurant, anyway? This is a sweet way to end a sweet day with those you love. 

Ingredients

2 large eggs
1/2 cup hot coffee or water
1/2 cup unsweetened baking cocoa
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup plain yogurt
1 1/2 teaspoons vanilla extract
1/3-1/2 cup raspberry jam
1/2 cup softened butter
3/4 cup GOLDEN BLOSSOM HONEY

  1. Can't believe ya people have raspberries in da middle of winter! So jealous! Loooks so sinfully nom and so springy and refreshing in these cold February days! Why did you put a whole mint stalk on it LOL looks like it gave you problems and you was like - well, screw it and you threw the whole thing on it LOL Torte is called torta in my language btw. I would mash the upper part of the cake, mix it with jam, then spread some jam over the bottom part, put the mashed mixture over it and then top it with whipped cream! But that has always been the secret of my tortas :) Wishing you and Jason a lovely Valentines weekend, go naughty and have fun. Did honey go up in prices over there like it did here?

    1. We do have raspberries in the middle of winter, but they are 4x the cost as the in season berries during the summer months. You need to be really rich or desperate to buy them now.
      The mint looked a lot better in person. Didn't photo well, but was too late to change it after I went to edit the pics. Sometimes you win, sometimes you lose.
      One day you will have to get a working camera and start taking photos of your yummy meals and desserts. I'm not sure if honey went up in price here as I have a few years worth on hand now, so I haven't been paying attention.

  2. That looks very yummy.I made a raspberry zinger cake last weekend. The last two Valentine’s, we went to a fundraiser gala for the Upside of Downs. It’s a great event and getting dressed up is such a treat. Obviously, that was canceled this year!

    1. Raspberry zinger cake sounds divine. Is it like those Little Debbie snack cakes that are so good? Too bad the gala was canceled this year. Maybe it will be even more grand next year to make up for the loss this year.

  4. What a delicious and totally V-Day-appropriate cake! Honey is a great addition, because it keeps cakes moist and increases their shelf life.

  6. This looks so yum!! Chocolate and raspberries? Yes, please! My husband waits until Valentine's day to go out alone each year. I wanted to reserve one of those outdoor igloos, but they have a reservation fee of $200 that comes with SQUAT, so that was a big no. Looks like we'll be going out to our typical spot this year. They made pretty drastic restrictions for the holiday so we felt comfortable enough going. Enjoy your time away!

  17. My sister is making this... I showed her the link over the weekend. It does look fabulous, and I love that the jam makes it easier to use. I'll be conveniently 'dropping in' when she gets her torte made. Good sisters help sample new treats. ;)
