Peach and Raspberry Trifle

I missed strawberry picking this year. I don't know why I thought you could pick them through July, but apparently June is the cutoff date. However, raspberries, blackberries and blueberries are now in their prime picking season, so Allison and I will be headed out this week to load up on fresh berries. I love this time of year because fruity desserts are my favorite. Nothing beats a sweet, juicy dessert on a hot summer day! Recently, I made this Peach and Raspberry Trifle from Golden Blossom Honey to enjoy while reading out on my deck.

Peach and Raspberry Trifle

Like a lot of Golden Blossom Honey's recipes, you can easily swap out the fruit in this one for the fruit of your choosing. If you were lucky enough to pick some fresh berries to freeze this summer, you can use those, or whatever fruit you do have on hand. With this recipe though, I would suggest letting the flavors marry together for a few hours or even overnight. The pound cake really soaked up the fruit in my trifle making it extra flavorful the next day!


Ingredients
1 1/2 cups whipping cream
3 tablespoons GOLDEN BLOSSOM RAW HONEY
1/4 teaspoon almond extract
24 ladyfingers or 1 store bought pound cake cut into 1/2-inch thick slices
1 cup seedless raspberry jam
4 ripe peaches, peeled and sliced
2 cups fresh or frozen raspberries, reserve a few for garnish

  1. What a marvellous combination, fragrant peaches and aromatic raspberries are a match made in heaven. I've plucked all my raspberries two weeks ago so I'm now drinking my ice tea nekkid, no fruit, sadly. But I did venture out to our flea market yesterday with a mask, of course, to try to stash on tea as Hungary has closed borders again. I bought four boxes of Loyd's Lemon Green tea and found some of those Pickwick variations too and also some new Dove's shower gels that are not available in our shops :) So it was a good hunt indeed. I even found Palmolive's Cherry and Strawberry shower gels.

    1. We hardly get fruit scented body soaps here. Hand soaps yes, but not in body wash. You have to go to Bath and Body Works or The Body Shop if you want a wide variety on those. I had some lady bitching at me in Bath and Body Works last winter wanting to know who wants to walk around smelling like food? Well, I do LOL. But right now I am obsessed with a rose vanilla scent in my body products. I'll switch to warmer, spicier scents in September.

  2. It’s not my favorite thing to do, but my daughter loves it, so we go strawberry and blueberry picking every year. At least blueberry picking is easy because you stand! We went last Sunday and I’ve made a pie and a cheesecake.

    1. Hi, Theresa! I'm sorry that haven't visited in way too long. It has been such a weird time, and I just haven't been on top of things. I have thought of you many times. Our fridge croaked, and I made a couple of large batches of recipes of yours. One was a braised beef over noodles and the other was a ziti dish with Kalamata olives. We were without a fridge for eight days, and both of these dishes survived packed in ice. I swore to myself tonight that I would contact you ~ We again had your braised beef over noodles, for the second night in a row. It is now a favorite. So thank you!

      I hope that you and your family are doing well. I'm happy to hear that you were out berry picking with Allison. That sounds so normal. I'm staying close to home. With my asthma and allergies to most antibiotics, I have to be so careful. I struggled at first with being self-isolated, but I'm doing much better now. I am looking forward to catching up on your posts. Please take care!

  4. Wow, your photos are very bright, colourful and sharp. The cake looks so delicious. I'd love to try the recipe when I get better. Oh my God, I love baking making cookies. I'm saving my money so I can move out and live on my own, having my own kitchen. Huhu...

  10. Yes, these do taste so good when they are allowed to sit for awhile to blend. I love that you mixed peach and raspberry. Two delicious flavors. And I used to LOVE to pick strawberries. I haven't done it since I was a kid though.
