Mud Pie Ice Cream Sandwiches

Holy Heat Batman! I can't believe that I'm saying this, but it's almost too hot to do anything this month. Our temps are well into the 90's and won't be coming down any time soon. I suppose I shouldn't complain, because about this time last year we were in New York where it was so hot, parts of the city blacked out. While we aren't traveling this year (thanks a lot Corona), we are taking a page out of our New York adventure and are indulging in lots and lots of ice cream. Just about every Friday we're in line at the local ice cream parlor, but this week I decided we'd make our own frozen treats. I had some coffee flavored gelato in the freezer and thought it would be fun to use it to make Golden Blossom Honey's Mud Pie Ice Cream Sandwiches.

Mud Pie Ice Cream Sandwiches

I don't know if I'd recommend gelato for this recipe as it's already really soft right out of the freezer and melts quickly, so you'll have to eat it fast in these temps. Stick with a pint or two of your favorite ice cream. The sauce though is exceptional. Better than store bought. I'm going to save that recipe for year round use not only as a sundae topping, but for my pies and cakes too. So easy to make, and so, so yum!

Ingredients
Fudge Sauce:
1/4 cup GOLDEN BLOSSOM HONEY
2 tablespoons unsweetened cocoa
1 tablespoon milk
1 tablespoon butter
1/4 teaspoon vanilla extract

20 thin chocolate wafer cookies, sometimes found in the ice cream aisle
1 pint coffee ice cream, slightly softened

  1. That looks so gorgeous, dear, one of your best in a long time, methinks! What a wonderful idea to put it on coffee beans. Why do you have coffee beans in your casa? :) I thought Americans don't drink black Turkish coffee.
    I've put some waffles in my strozbberry icecream a few days ago, and I'm planning on putting some hazelnut cococa digestive crunchy crackers in it this weekend. Putting chocolate coated banana slices straight from the fridge in it is also lovely.

    1. Thank you, dahlink ♥ We don't drink coffee here (Jason will in winter occasionally) but I keep the beans in my fridge for photos and also because I love how they smell.
      You've got some delicious ice cream creations going on at your place. I may hop a plane and come share a pint or two with you. Never mind. We aren't allowed in Europe just yet LOL!

  2. With lactose issues, we generally don’t eat ice cream. I make an exception for Graeter’s coconut chocolate chunk, because it’s to die for and nothing else compares! If I suck down some Lactaid, I do like gelato, but it has to be the real stuff, which is hard to find.

    Are those pizzelles in your photo? One of my favorite treats!

    1. Yes, those are Pizzelles and they are totally delicious! I'm just now learning about them and wondering how I've missed out on them my whole life!

      Graeter's has THE BEST chocolate chunk ice cream. I haven't tried coconut, but as soon as I gobble up the 5 pints that are currently sitting in my freezer, I'm going to try that one next!

  9. This sounds AMAZING!! It’s ridiculous hot here on Long Island. We had a tropical storm yesterday so it’s humid and sticky on top of it. I’m going to have to make these to beat the heat. I’m a weirdo though. I like when the cookie on an ice cream sandwich is all soggy instead of crisp.

    1. I like soggy too, like ice cream sandwich soft. But this was a nice change for me.

  10. hmm... I'm not sure if my comment went through, I was typing and it was gone. Just saying I like the sound of this sauce! We visited our local ice cream parlor today. Reasonably priced, and delicious. We'll go back! How much more fun though, to make something like this at home!

  13. Oh yum! I haven't made ice cream since I lived up North in Lac Seul. Canned milk, crushed ice from the Icehouse, and lots of cranking to turn the paddles. Yours looks much easier and more delicious, Theresa!
