Pecan Lemon Cheesecake Bars

I know that some areas are starting to lift quarantine restrictions, my state included, but Mother's Day is going to be a tough one for me this year as I'll still be sheltering in place. As much as I'd love to see my own mama and spend some time with my oldest daughter who lives a few hours away on campus, Jason and I agreed that it would be best if I took a few more months in quarantine to reduce the risk of exposure because of my illness. I'll still have Jason pick up a hanging basket of flowers for our mom's porches, I'll make a tasty treat to go along with the flowers, and we'll do a drive by porch drop off Sunday morning. The weather is warming up and it finally feels like spring here, so I thought these Pecan Lemon Cheesecake Bars (a Golden Blossom Honey recipe) would be a great gift to pass along for Mother's Day. 

Pecan Lemon Cheesecake Bars

If mom loves lemon, she's going to love these lemon bars. They are light and fluffy and pair perfectly with a cup of coffee or tea. Don't worry if the batter looks like it needs doubled. It looked thin when I poured in over the crust and I worried about the lemon cheesecake layer being thick enough once finished, but it will rise and fluff up in the oven. If you don't have time to make a full cheesecake, these bars are a perfect substitute for showing mom how sweet she is this Sunday ♥

Ingredients
Crust:
1 cup flour
1/3 cup brown sugar, packed
1/3 cup butter, chilled and cut into small pieces
3/4 cup pecans, chopped

Filling:
1 (8 ounce) package cream cheese, room temperature
1/4 cup GOLDEN BLOSSOM HONEY
1 egg
2 tablespoons fresh lemon juice
2 teaspoons lemon zest
1 tablespoon milk
1/4 teaspoon vanilla extract

    Our state of emergency has officially ended yesterday so my mother went to local grocers for the first time in two months which is how long all people over 65 were banned from leaving their homes.
    Is this the longest you haven't seen Mariah?

    1. Mariah did come up before the lock down went into place. She will come up the first week of June for her birthday as well. She'll break down the doors to get her cheesecake, I'm sure LOL. I didn't see her from August until Decemember of last year while she was in school. We just didn't visit her then. I suppose it's preparing us for the long lengths of time we won't see her by next year when she moves to Portland.

  5. It's a sad one this year, for sure. I will only be able to see my daughter who still lives with us. I did buy my mom a calla lily (and one for myself!) and will stop by her condo for a few minutes on Saturday. I did end up breaking quarantine a week ago because she had some things that needed taken care of in her basement and I was worried she'd try to do it herself. I also fixed her toilet and computer while I was there.

  6. This is something my mother would love to eat. While it's not something I'd reach for, they do look so pretty!! I would like some to keep on display on my kitchen counter. They belong in a cookbook, seriously!

  11. Sure would be a hit here...my food poisioning not so much though. Best to stay locked up indeed, as some people are going to ruin it for all and there will be a second wave.

  12. I love the way the tops look.

    I'm going to run over Dove Chocolate, a card and maybe a flower to my Mom. I'm still trying to keep away from people if I can. I will talk to her, but won't go in. Then I'm taking over my nephew's their birthday gifts. The youngest (Edison) turns 6 on Mother's Day, and the one that's Mica's age turns 15 in a few days.

    My boys will make me a meal. I don't expect a lot.

  13. Lemon is one of my faves. These cheesecake bars would be a hit with me anytime of the year!! Best to stay in for sure. I fear people are going to go nuts and a second wave could be worse than the first. I sure hope not though.

    1. I finally ventured out on Sunday to the grocers. It amazed me at how many people were out and about and how many weren't even wearing masks or weren't wearing them properly. That second wave is coming, I'm sure. We can just chuck this whole year right in the garbage as far as I'm concerned.
