Lemon Zucchini Muffins

It seems like when everyone was busy snapping up all the toilet paper, they grabbed all the yeast too. On one hand, it's annoying that I can't find any, but on the other, I'm glad that you all are making good use of your kitchens. There really is something comforting about baking during this pandemic, so I've been making a lot of baked goods that don't require the use of yeast. I'm a little burnt out on banana bread, but these Lemon Zucchini Muffins caught my eye on Golden Blossom Honey the other day. And since I had all of the ingredients on hand, I figured why not give them a try?

Lemon Zucchini Mufins

The temperatures are on the rise and it's finally starting to feel like spring. These lemon zucchini muffins just have a very spring-like vibe to them, so they are perfect to bake up to add a little sunshine to your dinner table. If you're stuck in the no yeast on the shelves dilemma like I am, then snap up this recipe so you can still indulge in baked goods until we finally start to see things return back to normal. 

Ingredients
1 cup flour
1 cup whole wheat flour
1 Tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/8 teaspoon ground cloves
1 egg
3 Tablespoon vegetable oil
1/3 cup GOLDEN BLOSSOM HONEY
1/2 cup milk
1/2 cup low fat lemon yogurt
1 Tablespoon grated lemon rind
1 cup (firmly packed) grated zucchini

  1. Sounds like they do the trick. Burnt out on banana bread though? Never thought you'd be burnt out on anything cooking wise. Yeast is hard to come by here too. Got lots of TP on shelves though.

  2. I found a 500g package of yeast at Aldi, big as a brick, we had to cut it into smaller pieces, wrap in paper, and put them in the freezer. I don't use yeast (although I do take yeast pills with Vitamin B complex), but my mother does. You can use a bit of baking soda with a spoon of lemon juice instead of yeast, but then you have to bake the dough right away, without waiting for it to rise first.

  3. Yummy! I like recipes that use both whole wheat and white flour because it gives good results. It's been hard to even find flour and sugar here, as everyone has become Betty Crocker I guess?!

  5. I like anything with lemon in it. I should make these. I have so much zucchini in the deep freezer that needs to get used. I've been trying to use stuff up.
