Honey Almond Mousse

Are all of your days just kind of jumbled together lately? Mine sure are. I actually forgot that this Sunday is Easter and totally spaced on getting Allison anything for her basket. Oops! Thank goodness for online ordering and in-store pickup because it was Target for the rescue this year. My planning is so off, I haven't even gotten provisions for our dinner yet. I'll be super glad when this virus passes because I'm just all kinds of messed up right now on the order of things. It's just going to be the three of us at home this year, so we won't be doing anything fancy food-wise. Dessert is going to be a simple mousse, made with things I already have on hand. Honey Almond Mousse

Honey Almond Mousse is a lovely, light springtime dessert. It doesn't take a lot to get it tossed together, and what's nice about this recipe is that it's made with kitchen staples that you should already have on hand. If you don't have fresh mango, the frozen chunks can be used in its place. Or, if you don't like mango, swap it out for your favorite fruit of choice. There are no rules when it comes to creating your favorite flavor combinations here! 

Ingredients
Mousse:
1 1/2 teaspoons unflavored gelatin
6 tablespoons water
3 egg yolks
1/3 cup GOLDEN BLOSSOM HONEY
1 cup whipping cream
1/4 teaspoon almond flavoring
Sauce:
1 ripe mango, peeled, pitted and sliced
1 tablespoon GOLDEN BLOSSOM RAW HONEY

  3. I bet missy will miss her Spanish lover, did they hook up already? I don't have a feeling it's Easter either, we have a three day 24h curfew as of today so there won't be any shopping on Easter Saturday either. I did put up my ducks and eggs on the table and have chocolate eggs ready to be eaten on Sunday if we are still alive till then. But then again I might sleep Sunday off as it will be a very depressive date for me...

    I put all our trash and recycle box 1 day early this week. My neighbors probably thought I was nuts. There was really no point in fixing it, after I realized.

  8. Happy Easter, Theresa! I actually have frozen mango chunks, but sadly no whipping cream or unflavored gelatin. 😔 It's supposed to snow on Easter Sunday, so we're planning on making crockpot stew. Take care of yourself!

  16. I have everything but eggs. They're as hard to find as toilet paper around here. I do love the way they look and am certain they would taste delicious too. We had a very different/quiet Easter here too, but my son enjoyed it, and his little 'in the house' egg hunt. :) And yes, the days jumble. I jumped up this morning remembering I had to 'work!' Got to my 8:00 a.m. video chat just in time (with the camera turned off this time! I hadn't even brushed my hair yet!!). And I'm not one to stay up late or sleep in, but lately I've been doing both. Stay safe. :)

  18. I have not been that successful working with gelatin and making mousse.. I know it's simple I just don't know why it didn't work well with me. Gotta try it again :)
