Lentil Soup

It seems like second winter has hit in these parts once again, and that means there's still plenty of time left for soup season. There's nothing that I like more than a big bowl of soup, a steaming mug of tea, and a good book to snuggle in with when it's blistery outside. While I do keep a few cans of ready made soup in my pantry, I firmly believe that homemade is where the party is at. Not only does it taste better, but since it's not packed with sodium like canned soups tend to be, it's much healthier for you, too. Earlier this week, I decided to scroll through my list of recipes that I have saved from Golden Blossom Honey and thought that this Lentil Soup looked like it would be perfect to tuck into for a little bone warming comfort. 



This lentil soup is packed full of healthy veggies and filling lentil beans making it the ultimate winter comfort soup. I love that it's made with chicken stock instead of water because the stock always adds that extra kick of flavor that tends to be lacking in water based soups. If you're still getting hit with snow, stay in this weekend and simmer yourself a huge pot of this soup. Pair it with a few slices of crusty rolls or French bread for a complete and hearty lunch or dinner.

*Lentils are one of those foods that can make the tummy a little gassy, so you can add a pinch of baking soda while cooking to help with digestion*

Ingredients
9 cups chicken stock
1 Tablespoon margarine
1/2 cup carrots, peeled and diced
2 cloves garlic, chopped
1 leek, white part only, chopped
1/2 cup onion, diced
1/2 cup celery, diced
1 Tablespoon flour
3/4 cup beer
3 Tablespoons red wine vinegar
1 bay leaf
3 cups dried lentils
1 Tablespoon GOLDEN BLOSSOM HONEY
pinch white pepper, to taste

  1. Gorgeous photos, you already know I adore lentils, especially red lentils, I think I have about 4 or 5 kilos of it currently in my pantry, it will be useful when corona virus epidemics hits us. We already have no masks to find in drug-stores so I imagine the food will be scarce too when the worst comes.

  2. That's a good way to use the beer my oldest leaves behind if he comes to stay for the weekend. It does look like some comforting eats, and the temps have dropped significantly here (46-degrees right now!) so soup is perfect!

  4. I've never used lentils in my soup but I've thought about it. As for the snow, we don't get snow in Vegas all that often. Once every 8 years or so.

    I love lentil soup. This recipe is a little different from how I make mine but I am excited to try yours. My family will be pleasantly surprised.

  8. I love lentil soup, and do make it often. It's not snowing here. It keeps going from being cold, to warm again. This weekend it might be in the low 60s!

    I haven't been blogging as much. Back to looking at other job opportunities, just to see what's out there. We had conferences for the kids. Then I had to rewrite my exams because the test system we had doesn't work with the students newer systems. Lots of work.

  9. Soup season has come and gone here...as of now...hopefully stays that way. It is snowing everywhere around us, like 30 mins in every direction, but nothing here for weeks. Winning winter so far this past month.

  12. I've never heard the tip about adding a pinch of baking soda to help prevent gas from lentils. I'll try that for sure.

  19. I'm a huge lentil fan and quite proud of the lentils I make. I have to admit though I've never thought of adding honey to it. Hmmm, you've given me something to think about and try. Delish!
