Sugar-Free Cranberry Pumpkin Bread

Just one week now until Thanksgiving. Have you started dreaming about all of the yummy goodies that are going to be offered, yet? I am in charge of bringing dessert to our supper, and if you see the amount of recipes that my family tags me in on Facebook you would see it's normally something peanut butter related. In addition to a peanut butter pie or buckeyes I'll be toting to the dinner, I am also bringing a seasonal bread that can pass off for an end of meal dessert, but is sugar-free, for my relatives who are looking to cut down on the sugar in their diets this year. 

Sugar Free Cranberry Pumpkin Bread

This bread bakes up soft, moist, and full of seasonal flavor that is so perfect for adding to your Thanksgiving menu. There is no refined sugar in this recipe, but instead is sweetened with Stevita Naturals Stevia Sweetener. As you may recall, I've been using Stevita Naturals products for a little over a month, trying out their assortment of products in my recipes to help me with the reduction of refined sugars in my diet.

The recipe I am going to share will be enough to bake 2 loaves of bread. I did add walnuts to the entire batch, but if there is someone in your family with a nut allergy, you can easily halve the walnuts, then add them to the second half of the mixture once you've filled your first loaf pan. While I haven't tried it myself yet, for those looking to cut gluten from their diet, I am sure almond flour could be used in place of the all-purpose flour. Just make sure you research the cup to cup ratio first as it will not be a 1-1 ratio when making the switch.

Sugar-Free Cranberry Pumpkin Bread

 

INGREDIENTS:

  • 1 15oz can pumpkin puree (not pie filling)
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 and 1/3 cups all-purpose flour
  • 2 tsp Stevita Naturals Spoonable Stevia 
  • 3 cups unsweetened applesauce
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1 cup chopped cranberries, fresh or frozen
  • 1/2 cup chopped walnuts

INSTRUCTIONS:


  1. Preheat oven to 350°F. Spray 2 10 inch loaf pans with nonstick spray. 
  2. In a large bowl, combine pumpkin, oil, and eggs. Beat at medium speed until combined.
  3. In medium bowl, combine flour, stevia, applesauce, baking soda, cinnamon, nutmeg, and cloves. Gradually add to pumpkin ingredients, beating until smooth. Stir in cranberries and walnuts.
  4. Divide batter into the two prepared loaf pans. Bake in preheated oven for 50-60 minutes, or until wooden pick inserted through center of bread comes out clean. Let cool in pan for 10 minutes, then transfer to wire racks to allow breads to cool completely before serving.

If baked goods aren't your thing but you still have a sweet tooth to satisfy, I also concocted a Sugar-Free Mocha Coffee Chiller recipe. For this recipe, I used instant coffee (Maxwell House Sugar Free French Vanilla) and broke out my Stevita Naturals Cocoa Delight to add in some rich, cocoa flavor. This recipe rivals those high priced coffee shop frappes without the high calories and added sugar.

Sugar-Free Mocha Coffee Chiller

INGREDIENTS:


  • 2 cups sugar-free vanilla ice cream
  • 1 cup milk (or sugar-free vanilla almond milk)
  • 1/2 tbsp Stevita Naturals Cocoa Delight
  • 1/2 tbsp instant coffee (I used maxwell house french vanilla in this recipe)
  • 1/2 cup crushed ice

INSTRUCTIONS:


  1. Place all items in a blender and blend until smooth. Serve immediately.

  12. I'm making Pumpkin Cannoli and a veggie tray. Everyone kind of brings things to our family get togethers. I buy cranberries this time of year, and freeze them. Then I add them to smoothies throughout the year. It's super good + no sugar. Love this bread, I'll have to try baking it.

  13. The sugar free coffee mocha chiller sounds amazing right now. I love cold coffee for some reason. I'll have to pick up the ingredients when I make a run to the grocery store in a bit. I also love that there are so many products such as stevia so that I can make my favorite treats without all the added sugar.
