Spinach Lasagna Rolls

Hey, y'all! I'm finally back from vacation and ready to get back into the swing of things. I'll be getting around to publishing and replying to the comments left here on my last few posts over the next several days, and then I'll be swinging around to catch up with all my blogging friends, so hang tight and bear with me a little longer. I've missed you all so much and can't wait to see what everyone's been up to these past couple of weeks! But on to the good stuff for now. I just finished reading The 5 Love Languages, and while I probably have 2 love languages, I'd say my main one is Quality Time. With some of the big changes that happened in my family earlier this year, setting aside time each week so Jason and I can have a little time for just the two of us has become really important to me lately. Quality time doesn't have to mean getting gussied up for a night out on the town every week though. While we will do that occasionally, I also look forward to the nights where I cook us a meal and we stay in eating while playing card games or watching a movie. Those are actually some of my favorite quality time moments to spend together.

Before we left on vacation, Jason decided to take a hiatus from his Keto diet. He wasn't going to NY without sampling the pizza and cheesecake, or go to Boston and not get some baked beans and cream pie! So, I realized I had a small window of time that I could finally make these Spinach Lasagna Rolls, a recipe I've had saved from Golden Blossom Honey for quite some time, and seized the opportunity to dive into making it while the getting was good. 


Lasagna Rolls

These lasagna rolls make for a lovely dinner for date-night at home. Pair it with your favorite wine (right now I have an obsession with any of the reds from Michigan's Round Barn Winery) and kick back for a relaxing night in with good food and good company. Or, if quality time isn't your love language, serve it up for Meatless-Monday. Either way, it makes for one outstanding dish!

Ingredients

2 teaspoons GOLDEN BLOSSOM HONEY
1 (16 ounce) jar marinara sauce
2 cups cottage cheese (small curd)
1 (10 ounce) package frozen chopped spinach, thawed and squeezed completely dry
1 cup Parmesan cheese, grated
2 large eggs, beaten
10 lasagna noodles, cooked and drained
1/2 pound mozzarella cheese, shredded
salt and pepper to taste

    I do love me spinach in anything, I could eat it everyday, methinks, sadly we haven't had it in our markets all summer long for some reason!
