Mediterranean Roasted Potato Salad with Green Beans

Have those of you who are celebrating Independence Day finalized your cookout menus yet? I was going to make a potato salad this year, but since I'm banking a few calories now so I can spend extra in New York in a few weeks, I didn't want to go with a heavy mayo based version. Thankfully, Golden Blossom Honey saves the day with this Mediterranean Roasted Potato Salad with Green Beans. I still get my potato fix, but also the added health benefits of the other veggies that are tossed in.

It's starting to get blistering hot out now, and if the thought of eating mayo based potato salad in these temps makes your tummy churn, this salad is made with a light honey mustard dressing that won't leave you feeling icky in the heat. I'd say it packs in a ton more flavor over American potato salad too. It's an indulgent side dish without the guilt. Go ahead, have a second helping. But you better hurry before everyone else gets the same idea!

Ingredients
Potatoes:
3 pounds red skinned potatoes, cut into 1-inch chunks
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
salt and pepper, to taste
12 ounces fresh green beans, trimmed and cut into 1-inch lengths
1 cup cherry tomatoes, halved
1/3 cup Kalamata olives, pitted and halved
1/2 cup fresh basil, silvered
1/4 cup feta cheese

Dressing;
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons GOLDEN BLOSSOM HONEY HONEY MUSTARD

    Nice works, I'm guessing they're white, most of your photos have bluish tinge!
    Potato salad in my country means boiled potatoes mixed with a bit of water, vinegar and onions.

    1. I'm not an overly huge fan of boiled potatoes. I really like them roasted with a little olive oil and salt. I like a baked potato occasionally too. Jason's into using his smoker a lot, but he's been over-seasoning the potatoes, so I don't know if I like that method or not. That's what happens when you leave it to a non-cook to make your dinner though, I suppose.

    2. I meant forks, not works :)
      I usually make a salad for lunch with boiled potatoes grated and mixed with mayo and vegeta once a week as it can stand in the fridge till tomorrow. Sometimes I add some dill pickle in it, or beans or corn.

    1. My kids pick out the olives too. They don't mind plain black olives, but Kalamata olives they really dislike.

  6. Yes! I love that you put Feta in there. It is such a flavorful cheese. And you are right, a version sans mayo is just what the Dr. ordered in these temps!

    1. I love that feta is one of those strong cheeses that you don't need a lot of. That way you can sprinkle on a little, get a lot of flavor, and save calories instead of piling on a less flavorful cheese.
