More YUM At Dinner With Hidden Valley Ranch Seasoning Shaker #HVRlove

As we're coming upon the end of the school year, I'm finding it hard to budget my time to get everything done that needs to be done in a day. By the time dinner rolls around, I'm exhausted and more times than I care to admit, contemplate putting out a box of cereal and telling the family to fend for themselves. Instead, I'm brushing up on my make once, eat twice meal skills. Leftovers are going to be the name of the game around here for the next few months, not only to ensure that my family eats a proper, healthy meal every day, but to save my sanity as well. With a little creativity and the right seasonings, like my trusty Hidden Valley Ranch Seasoning Shaker, it's really easy to add more YUM to the dinner table when you're short on time.


Hidden Valley Ranch Seasoning Shaker

With a little planning and just adding a few extra ingredients to your shopping basket, you can stretch your free time a little further each day and still have a tasty dinner on the table every night. One of my favorite ways to use chicken leftovers is in my Buffalo Chicken Salad.

Buffalo Chicken Salad

If you are having grilled chicken one night, toss a few extra pieces on the grill to use in the next night's dinner. This recipe is also a great way to use up leftover rotisserie chicken. Just de-bone your rotisserie meat to toss into tomorrow's salad.

Add a few bread bowls and a Hidden Valley Ranch Seasoning Shaker to your shopping list and you have a complete meal practically done for you. From start to finish, this recipe takes less than 15 minutes to have tossed together and on the table. What more could a busy parent ask for!?

Buffalo Chicken Salad

Buffalo Chicken Salad in a Bread Bowl

INGREDIENTS:

  • 1.5 cup leftover cooked chicken, cubed or shredded
  • 1 bag Romaine lettuce (the mix with the shredded carrots and cabbage)
  • 1 stick butter
  • 1/2 cup hot sauce
  • 1 cup shredded cheddar cheese
  • 2 tablespoons Hidden Valley Ranch Seasoning Shaker
  • large bread rounds to make a bread bowls for serving (optional)

INSTRUCTIONS:

  1. If you are serving the Buffalo Chicken Salad in a bread bowl, cut the top off of the bread and hollow out the center. Cut the bread center bits into squares for making croutons. Spritz (or use a basting brush) to lightly coat the inside of the hollowed out bread with olive or avocado oil. In a 350 degree F oven, toast the bread and bread cubes for 5-7 minutes, until lightly toasty.
  2. While bread is toasting, melt the butter in a sauce pan over medium heat. Once melted, remove from heat and stir in the hot sauce. Set aside and allow to cool.
  3. Toss together the salad mix, chicken, and cheddar shreds. Pour the hot sauce mixture over the salad mixture and toss to coat. 
  4. Scoop salad into bread bowls, top with your homemade croutons, and serve immediately.
If you'd like an extra kick of flavor, sprinkle a little more Hidden Valley Ranch Seasoning Shaker over your salad before serving.

If you don't use the bread, this recipe is Keto friendly. My husband opts to eat his salad from a bowl, whereas my girls like theirs served in a bread bowl.
