Leftover Special: Avocado, Grapefruit & Turkey Salad

Are you all still walking around in your fat pants today? I completely overdid it on the holiday trimmings last night at the in-laws and couldn't wait to come home and rip my pants off so I could breathe again. Today we will be putting up our Christmas decorations, and I foresee nothing but spandex bottoms in my future. Or, at least until the weekend is up and I feel like I've digested all of that Thanksgiving goodness. I'd say the weekend after Thanksgiving is my favorite, because all of those leftovers means I can skip out on making dinner while the family digs into the remainder of the big meal. We love to create new dishes out of the traditional leftovers, and since I am desperately in need of a few lighter meals since I can't fit into my jeans right now, I thought we'd put this Avocado, Grapefruit and Turkey Salad recipe from Golden Blossom Honey on the menu for this weekend. 


Avocado, Grapefruit & Turkey Salad

This salad is a great way to use up those leftover turkey bits and breathe new life into any leftover lettuce. I like the addition of the Asian inspired dressing, which gives it a tangy zip of flavor without adding in a lot of extra fat into the dish. After such a big holiday meal, this salad is the perfect dish to help you get back on track before the next big holiday rolls around and you have to break out the spandex once again.

Ingredients:
 
Dressing:
1/2 cup rice vinegar
1/3 cup GOLDEN BLOSSOM RAW HONEY
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 tablespoon sesame oil
salt to taste
Salad:
1 large head red leaf lettuce, torn into bite size pieces
1 avocado, peeled and cut into bite size pieces
1 pink grapefruit, peeled and sectioned
2 cups cooked turkey or chicken, cubed
1/4 cup pine nuts, toasted

    Wait, what? You is putting Christmas decorations already??? I usually get fed up with them within two weeks tops, I could not handle them for more than a month!

    1. People here were putting them up November 1! That's too early for me. We always do ours the day after Thanksgiving, though this year it did feel a bit early. We went with a real tree and gave the old one to charity. Had a few snags getting it up, but once we took Jason out of the equation, the girls and I got everything worked out.

    The salad looks great! I wish we had more left over turkey so I can make some. Oh well, I guess I will have to replace it with chicken!

  7. My mom usually has the salad covered. This does look wonderful!

    I typically make a veggie tray and this year did a squash dish with caramelized onions. Then for the other get together we made a turkey salad wreath in crescent rolls. For both event I brought the mini pumpkin pies.
