Shrimp Is The Fruit Of The Sea

I think the end of the school year is just as hectic as the beginning of the year. If you have kids in school right now, I am sure you are feeling the pressure to have everything wrapped up before school is out in a month. Right now we are dealing with final exams, preparing for the year end choir concert, school formals (dances/prom), and middle school graduation. Tomorrow I will be making the 3 hour drive to Purdue to pack up Mariah's dorm and bring her back home for the summer. So, to say that I have a lot on my plate right now would be an understatement. Most days it's go, go, go, so I need to rely on dinner dishes that can be on the table in under 30 minutes. One of my favorites is Shrimp Gratin from Golden Blossom Honey. 

Shrimp Gratin

I try to make a seafood dish for Jason once a month, and if it includes shrimp I make extra because it's the only seafood Allison will eat. She truly believes that shrimp is the fruit of the sea. This recipe can be on the table from start to finish in just under 30 minutes, so it is perfect to keep on hand for busy nights when you just want to get something tasty on the table without a lot of effort. 

Ingredients
1 Tablespoon olive oil
2 Tablespoons onion, minced
1 garlic clove, minced
1 pound shrimp, cleaned and deveined
2 tomatoes, seeded and diced
4 ounces feta cheese, crumbled
1 teaspoon GOLDEN BLOSSOM HONEY
2 eggs
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup half & half
3 Tablespoons Parmesan cheese

    1. Brain fart. I left it in draft mode instead of scheduling it. Too much going on my brain is about fried. I actually went and got Mariah last night so we could have enough time to celebrate Cinco de Mayo with the family. I didn't want to drive there and back then have to host a party all in one day.

      Allison is the pickiest eater anymore. Shrimp, fettuccine, blackberries and cucumbers are what she's living on these days. Teens....

  2. I do really like Shrimp. There was one point in time when I got hives, and my mom thought for sure I was allergic to shrimp. I think it was just a one time situation because I've eaten it plenty of times, and was fine.

  9. The end of the year IS hectic. We just finished FSA (my son and my students). Now there's the ton of things happening during the final countdown. I can't wait to relax for a minute. The recipe looks delish! My oldest two especially love shrimp!
