Peter Cottontail Loves Pickled Carrots & Zucchini

It seems like Easter isn't creeping up on us, but is charging at us full steam ahead. Thankfully, I don't have to host dinner this year, but I'll still need to provide a dish for the buffet table at my in-laws. Cole slaw is usually served, but I wanted to try something a little different this year, so yesterday I did a test run on this Pickled Carrots and Zucchini recipe that I found on Golden Blossom Honey. With how fast Easter is approaching, summer will be here before we know it. I've been hitting the gym hard and don't want all of those evil burpees and squats to amount to nothing. That's why I am really in love with this recipe. It tastes very similar to cole slaw without the fatty dressing that's on the traditional version.

Pickled Carrots and Zucchini

Pickled Carrots & Zucchini make an awesome side dish for your Easter meal. The tender carrots and zucchini topped with a zesty dressing is a mouth watering combination. If Peter Cottontail shows up, you may have to chase him off because he'll want the entire dish for himself!

Ingredients
1 pound carrots, peeled and cut into 3-inch long matchsticks
1 pound zucchini, trimmed and cut into 3-inch long matchsticks
1/2 teaspoon salt
1 1/2 cups white wine vinegar
1/2 cup RAW GOLDEN BLOSSOM HONEY
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1 teaspoon fresh thyme, finely chopped
1/2 teaspoon coarse ground black pepper

    I've never tried zucchini raw. It does look great on the photo as well and clever of you to avoid cooking anything since it is served raw :) I'd ad celery in it, but I know certain someone here hates it :)

    1. The carrots are boiled for a few minutes, so it's not completely raw. Which is good because I don't digest raw carrots too well. Raw zucchini is one of my favorite snacks. I love to chop in into little chip rounds and munch away! Mariah would definitely not go for the celery. I will never understand her aversion to celery!

  6. I didn't know what a Burpee was... or I thought I didn't. Then I looked it up. My oldest son does those. The recipe looks really good. Right up my alley. :)

    1. Your son is really fit, so I am sure he doesn't mind burpees. I, however, am not fit, so they are hell on earth for me lol

    2. He does them straight, and he does them with a crazy wheel thingie that would kill me. He is crazy fit, but he always has a little tiny pooch on his belly that drives him nuts!!! His brother gets a six pk w/o trying much at all, and he is NOT one to work out, so it's kind of a funny thing between them. ;)

  10. honey on cooked veggies is the best! I learned how to do that with baby carrots from a friend who helped me before my future mother in law came over for dinner!

  15. Those look so good! Pickled veggies are the perfect side especially during Spring or Summer. It's always fun to have them around at barbecues and picnics.
