5 Days of Super Bowl Eats! Crispy Onion Rings

My 5 days of holiday cookies posts were a success during Christmas, I thought I'd add in another batch of posts about delicious eats. Since Super Bowl is right around the corner, and is one of my favorite parties to attend, I'm going to post my top favorite quick and easy finger food recipes that will go great with the big game!

Today is Crispy Onion rings! These are soooo simple to whip up, and taste ah-mazing! My girls don't like onions very much, but they definitely gobble these onion rings right up!

Ingredients:

1 quart of vegetable oil, for frying
1 cup dry pancake mix
1 large onion
1 tsp garlic powder
1 tsp onion powder

Dirctions:

Heat oil in a heavy bottom saucepan over medium high heat.
Slice onion, the carefully pop each ring loose.
Prepare pancake mix according to package directions.
Add garlic powder and onion powder to batter. Stir until mixed thoroughly.
One at a time, dip each onion ring into batter, then place coated ring into heated oil.
Fry until batter turns a golden brown, about 1 minute on each side.
Drain on paper towels.

  2. I do love me onion rings, but I'd rather go hungry than eat anything with a ready made mix in it :) I usually dip mine red onion rings into some beer batter (2yolks,cup of beer, 150g flour. salt and then 2 whipped egg whites)

  4. My oldest two boys wanted onion rings when they were home for Christmas. I was a good mama and obliged them. :)

  5. My husband likes onion rings. I'm not for very much fried foods. I got burnt out on it when I lived in GA. We had to evacuate our apartment, and stayed with a lovely family that fed us nothing but fried foods. Before that time I liked fried food in moderation.

    They also had cats (allergic), and their daughter talked about how there were bugs in her hair. That's a whole other story.

    It was good they took us in.

  13. We don't have Super Bowl around here, but I can find some other fun occasions to do this recipe. I'll only substitute vegetable oils with butter or coconut oil and off I go. Oh I can't wait to do it this weekend!

  16. I love onion rings! It's the only thing I would eat at Burger King as well. I have tried making my own before but they didn't turn out right. Might try your way. Thanks for sharing.

  17. Well it's Sugar Bowl day for the Bucks today and I have the onions on hand so why not? I need a gluten free pancake mix though. Sounds good.
