I love this time of year when fresh produce is in abundance. Our library had a seed bank to take from this spring, giving away many different herbs and veggie seeds to anyone in the community who wanted to plant a garden. Unfortunately, I don't have a lot of space in my yard where the sun hits for 8 hours a day, so I have to be mindful of what I'm planting with the limited space I do have. I decided to grab a few herbs that I can container grow, but then I also grabbed some pepper and snap pea seeds since those plants don't take up much ground area. While my plants won't be fruitful for another 6-ish weeks, I am already plotting out how we'll use up our garden fresh produce once it's ready for picking. Since we eat a lot of stir fry during the warmer months, I thought this Stir-Fried Beef and Vegetables recipe from Golden Blossom Honey was one that we'd want to test this week so we'd have something to look forward to while waiting for our garden to sprout.
With the variety of veggies and a sweet sauce, this stir fry is packed full of flavor and texture, making it an enticing meal option for warm weather dining. The vegetables fry up crisp and the beef browns quick and tender. If you aren't into beef, chicken or shrimp would make great substitutes, or if you're trying to stick with a vegetarian option, add some shiitake or portabella mushrooms the last minute or two before removing the wok from heat. Serve your stir fry over noodles or rice, and add in a side of hot and sour soup or egg rolls and you've got a tasty feast with plenty leftover for lunch the next day.
Ingredients
Sauce:
1/3 cup water
1 tablespoon cornstarch
3 tablespoons soy sauce
3 tablespoons GOLDEN BLOSSOM HONEY
3/4 teaspoon dried ginger
1/4 teaspoon salt
1/8 teaspoon cinnamon
Stir-Fry
1 pound boneless beef sirloin
2 tablespoons olive oil, divided
2 cloves garlic, minced
2 carrots, cut into 3-inch pieces
1 red bell pepper, cut into 3-inch strips
1 cup sugar snap peas

Does your library give away garden seeds to the community?
No, about the only freebie from our library has been Covid tests 🙄 Free seeds would be nice. My husband has spent a lot on seeds because so many animals seem to dig them up.

DeleteHope your garden flourishes this year. We have had an unusual amount of rain this spring, so everything has been greener than usual and our garden is filled with weed and all kinds of grass, poppies etc, but it is currently the trend to leave your lawns with weeds and wild flowers, so my brother just mows tracks around it and leaves islands of weeds and flowers LOL We need to return the bees to nature.
ReplyDeleteBut on Sunday the temps should rise above 30C so I imagine all will die in about a week or two scorched by the sun. I just hope we won't have to wait for three months for rain to fall again like last year.
I had a free week waiting for the new book, so I used last mild days of spring before the Sunday heat, to do shopping of everything I need so I don't have to sweat and toil when the temps rise.
I asked Jason not to mow part of our back yard. We have some weird things happening back there this year. Wild strawberries are growing and we spilled some beans back there and now we have a lot of bean plants sprouting up. I want to see how it all works out, at least until July when everything will start to scorch here as well. I agree, we need to do more for the bees and other pollinators too. I'd love a yard that I could just dump wildflower seeds everywhere, but we don't get enough sun for a wildflower garden to thrive.

DeleteThat's a great way to feature veggies. I had no idea how versatile honey was until you started this Friday series. Now, I check the Golden Blossom Honey site often and when we run out of it, I always search for the cute bear. My favorite condiment container in the house. :)

DeleteAh, gardening... My library gives away ALL THE THINGS but gardening is not for me. Too many allergies. Still, I admire those who can and do garden. It's an art in Florida.
ReplyDeleteMy husband says that strawberries grown in Florida are the best! I'd love to live in FL just to try my hand at fruit gardening!
