Grilled Vegetable Open Faced Sandwich

Due to health issues, last month I started a new life as a vegetarian. Honestly, I was a little worried that eating was really going to suck for me. I do love chicken and am totally mourning the loss. In a panic, I started emailing all of my vegetarian and vegan friends asking for their best recipes. I received some great suggestions before it dawned on me that Golden Blossom Honey has a really great vegetarian section I should have been browsing. I test so many of their recipes on a weekly basis, it was a "duh" moment, for sure.  

Dinners started out a bit challenging, but thankfully I am finding some great meals that the whole family can enjoy without too many alterations to the recipes (don't worry, I'll still be sharing some of their favorite meat dishes since they aren't jumping on a vegetarian diet with me.) One that I didn't have to change was this Grilled Vegetable Open-Faced Sandwich.


It has a real Italian flare with the spices and pesto. Great for lunch or dinner. Jason has never liked eggplant, but he ate his entire sandwich and didn't even realize there was a slice on it. I do love those recipes where I can sneak a few extra veggies into my family's diet and they don't even realize it!


Ingredients
1/2 cup olive oil
2 teaspoons oregano, dried
1 tablespoon GOLDEN BLOSSOM HONEY
salt and pepper to taste
1 red bell pepper, halved
1 yellow bell pepper, halved
1 medium eggplant, cut in 1/4 inch thick slices
1 loaf Italian bread, sliced in half horizontally
1/2 cup pesto, found in dairy department
1 cup mozzarella cheese, shredded

  1. Looks nom minus the pesto found in the dairy department :) You can make your own :)
    You know you can turn most of your meat dishes into vegetarian ones, moussakas, lasagnas, meatloafs, stuffed peppers and other veggies, burgers... you can replace meat in all of them with onion fried soy, sunflower seeds, grind walnuts, tofu, seytan, lentils, even good old oats.

    1. I've experimented with tofu and veggie sausage so far. Did not like the sausage one bit though, but then again, I have never been a sausage fan. I will be making my own seitan soon and want to buy some jackfruit for bbq sandwiches. It really hasn't been a bad transition at all.

    2. I like tofu best breaded in breadcrumbs and sesame and fried, goes well instead of any meat for dindins.

  2. Most people don't realize I'm a vegetarian since 7 but not for health reasons. We had a provided meal at work and some realized it when they had to make a special one just for me.

    1. I am finding social gatherings a bit awkward where food is served. People do look at me funny when I skip over the main dishes and load up on the non-meat side dishes.

  3. That looks great indeed. I wouldn't want to do without my chicken though, ever other meat I don't bother with, but will keep that chicken.

    1. Chicken and Turkey really are the best and healthiest meat options. I wouldn't have given it either if I had a choice.

    1. It truly is a flavorful dish. I always though vegetarian foods were bland and boring. I am learning that's not true though, and this recipe is a great example!
