Now that we're about to kick off grilling season, this recipe is the perfect one to keep in your arsenal of summertime lunch and dinner ideas. It has a great mix of savory and sweet, with a bit of a peppery bite added in, and it is so simple to prepare, this could quickly become a summertime favorite recipe you'll turn to time and again for the next several months. My daughter is in her sandwich era, pretty much eating sandwiches daily lately. A self described Dash-Whore, if the girl could have Chick-Fil-A Door Dashed daily, I'm pretty sure she would. Alas, she's learning that adulting is a scam and is quite expensive, especially when you're a broke college girl on a budget. Now she has to find alternative chicken sandwich options that she can make at home, and save those restaurant options for special treats when she wants to splurge on herself. Since she's not keen on using the grill at home, the chicken in this recipe can be put in the broiler, so she can make this all on her own anytime the chicken sandwich craving hits. It's so much cheaper and healthier than those fast food chicken sandwiches, and is gourmet enough to pass as restaurant quality, and that makes makes this whole recipe just peachy in my book.
Ingredients
Relish:
1 tablespoon olive oil
2 large onions (about 2 cups), peeled, halved and sliced
1/4 cup GOLDEN BLOSSOM HONEY
2 fresh peaches, peeled and chopped
1/3 cup apple cider vinegar
1/3 cup dry sherry
1/4 teaspoon coarse ground black pepper
salt to taste
Chicken:
2 whole chicken breasts, halved, skinned and boned
2 teaspoons olive oil
salt and pepper to taste
4 crusty rolls cut in half
romaine lettuce leaves

That is a strange combo indeed LOL Other than radishes and spring onions, I have not really seen anything seasonal yet, even spring potatoes are rare and extremely expensive and we had in incredibly terrible hale storms in the country two days ago, in some cities the ice was like snow all down to ankles so I imagine not much survived that catastrophe! We did not have it here in the North, but we are having a coldish and rainy May which suits me perfectly. We even had to turn on the heating again last night after a month of break.
ReplyDeleteThat's some odd weather they had! It's been steadily getting warmer here and the past few days I have woke up sweating. I turned my air on full blast today just to get the house cooled down. I am dreading what the temperatures are going to be this summer if it's already getting to be ungodly hot in May. We'll all be cooked by August :(

DeleteWe are no longer allowed to have bbq's in my apartment complex (Even though some still do) so I no longer have a bbq. This looks good though.

DeleteWe don't have a grill actually. I never had much need for one and she hasn't wanted one badly enough to justify getting a new one
